Quick Pan Fried Spinach Frittatas

Ingredientes

  • 2 pkt frzn leaf spinach (10 ounce. size)
  • 3 piece of matzah
  • 4 x Large eggs, beaten
  •     salt & pepper to taste
  •     dash nutmeg
  • 3 Tbsp. margarine
  •     grated parmesan

Direcciones

  1. Heat the spinach in a saucepan with 1/2 c. of water, till completely thawed
  2. (or possibly use microwave). Strain the spinach, reserving half the amount of liquid.
  3. Crumble the matzah and pour the spinach and the remaining liquid over them. Mix thoroughly till the matzah are softened. Add in the Large eggs, salt, nutmeg and pepper.
  4. Heat the margarine in a 12 inch skillet and add in the spinach mix. Cook on medium heat, uncovered for 5 min on each side. Sprinkle with grated parmesan and serve immediately.
  5. This is a shortcut for a Sephardic version.
