Receta Quinoa Leek Casserole

- Saute/fry first three ingredients till lightly browned. Add in tofu and Quinoa, continue to saute/fry for 2 min. Remove from heat and add in lowfat milk, gently stir mix. Lightly oil a casserole dish and coat with half of the bread crumbs. Keep remainder of the bread crumbs to top mix with.
- Place mix in the casserole dish and top with bread crumbs and cheese.
- Bake covered for 20 min at 350 F. Remove cover and allow cheese to brown. Season to taste with salt or possibly tamari and pepper.
