Receta Quinoa Salad with Broccoli and Chickpeas
A light and airy salad that has less calories and is even healthy.
Ingredientes
- 2 tablespoons fresh lemon juice
- 1 tablespoon parsley, chopped
- 1 teaspoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup Quinoa, cooked
- 3/4 cup canned Chickpeas, rinsed and drained
- 1 medium tomato, seeded and chopped
- 1 cup fresh broccoli, cut into pieces
Direcciones
- In a medium saucepan, cook Quinoa according to package directions.
- In a medium bowl, whisk together lemon juice, parsley, olive oil, salt and pepper.
- Add Quinoa, chickpeas, tomato, and broccoli.
- Toss to combine.
