%3C/p%3E%3Cp%3ESo,%20time%20to%20find%20something%20to%20cook%20for%20the%20four%20of%20us.%20%20(well,%20what%20was%20I%20going%20to%20do%20with%20the%20kids?...guess%20I%20could%20have%20banished%20them%20to%20their%20room%20with%20chicken%20nuggets%20and%20a%20movie...but%20nah,%20we%20decided%20to%20celebrate%20as%20a%20family)%20anyway....%3C/p%3E%3Cp%3EI%20found%20this%20awesome%20blog%20by%20a%20chef%20who%20takes%20killer%20food%20pix.%20%20I%20was%20just%20roaming%20around,%20checking%20out%20his%20recipes,%20when%20I%20found%20this%20one.%20%20I%20love%20tomatoes...in%20all%20shapes%20and%20forms.%20%20I've%20never%20made%20a%20stuffed%20tomato%20before,%20but%20his%20recipe%20made%20it%20seem%20so%20simple.%3C/p%3E%3Cp%3EI%20had%20to%20switch%20it%20up%20a%20bit%20seeing%20as%20how%20I%20can't%20get%20my%20hands%20on%20any%20sausage%20here,%20so%20instead%20of%20lamb%20and%20sausage,%20I%20used%20lamb%20and%20leftover%20quinoa%20that%20I%20had.%20%20I%20was%20worried%20it%20would%20lose%20some%20of%20the%20flavor...but%20oh%20man...these%20were%20some%20tasty%20bites!%3C/p%3E%3Cp%3EYou%20can%20do%20a%20couple%20of%20variations...use%20all%20quinoa%20and%20make%20it%20vegetarian...or%20go%20all%20T-Rex%20and%20use%20both%20sausage%20and%20lamb.%20%20If%20you're%20a%20bit%20fearful%20of%20lamb%20(which%20you%20shouldn't%20be%20because%20it's%20fabulous)%20sub%20in%20some%20good%20ground%20beef.%20%20You%20could%20also%20add%20a%20bit%20of%20cheese%20to%20the%20top%20for%20extra%20gooeyness...%20;)%3C/p%3E%3Cp%3EI%20rounded%20out%20the%20meal%20with%20a%20nice%20tossed%20salad%20and%20some%20oven%20roasted%20green%20beans%20(my%20fave%20way%20to%20cook%20fresh%20green%20beans)%20%20It%20was%20perfect.%20%20Happy%207%20years%20baby!%20%20Here's%20to%20many,%20many%20more!%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375F%3C/p%3E%3Cp%3ESlice%20the%20top%20off%20the%20tomatoes,%20scoop%20the%20inside%20out%20(discard%20seeds,%20but%20chop%20and%20keep%20the%20pulp).%20%20Sprinkle%20the%20inside%20of%20each%20tomato%20with%20salt%20and%20set%20upside%20down%20on%20a%20rack%20to%20drain.%3C/p%3E%3Cp%3ESautee%20the%20chopped%20onions%20in%20olive%20oil%20until%20soft%20and%20translucent.%20%20In%20a%20bowl,%20combine%20the%20onions,%20chopped%20tomato%20pulp,%20quinoa,%20lamb,%20breadcrumbs,%20chopped%20sun-dried%20tomatoes,%20garlic,%20rosemary,%20thyme,%20hot%20pepper%20flakes,%20olive%20oil%20and%20a%20bit%20of%20salt.%20%20Stuff%20the%20mixture%20into%20the%20tomatoes%20and%20put%20the%20top%20back%20on.%3C/p%3E%3Cp%3EPlace%20the%20tomatoes%20on%20a%20tray%20and%20drizzle%20with%20olive%20oil.%20%20Bake%20for%2030%20minutes%20and%20serve!%3C/p%3E){kind=link}
