Ingredientes
- 1 cup quinoa, rinsed well
- 1/2 teaspoon salt
- 2 tablespoons lemon or lime juice
- 1 clove garlic, minced
- 1/2 cup extra virgin olive oil
- black pepper, to taste
- 1 cucumber, peeled and finely diced (about 2 cups)
- 2 cups cherry or grape tomatoes, quartered
- 2/3 cup chopped parsley
- 1/2 cup chopped fresh mint
- 2 to 4 green onions, thinly sliced (white and green parts)
