%20and%20ends%20up%20bringing%20home%20a%2010-lb%20bag%20of%20potatoes?!!%20Why,%20you%20make%20those%20phodis,%20of%20course.%20And%20more%20phodis%20and%20then%20some%20aloo%20tikkis,%20which%20then%20gets%20turned%20to%20a%20chaat%20with%20some%20chhole.%20And%20the%20usual%20suspects%20-%20aloo%20methi,%20aloo%20gobi%20and%20puris%20with..aloo%20bhaji,%20of%20course!%20To%20his%20credit,%20the%2010lb%20bag%20was%20apparently%20only%20a%20dollar%20more%20than%20the%204lb%20one.%20Very%20logical,%20right?%20:)%20It%20is%20a%20good%20thing%20that%20we%20all%20love%20potatoes%20(who%20doesn't?!)%20but%20even%20for%20us,%20this%20is%20a%20bit%20much..%20haha%20:)%20I%20still%20have%20a%20few%20left,%20which%20I've%20boiled%20and%20frozen,%20for%20future%20(much%20into%20the%20future,%20that%20is)%20use.%20%20Then%20I%20tried%20various%20breakfast%20options%20-%20country%20fried%20potatoes%20with%20onions,%20green%20peppers%20and%20herbs,%20latkes%20(yum!)%20and%20the%20only%20one%20I%20managed%20to%20take%20a%20picture%20of,%20the%20Swiss%20R%C3%B6sti,%20a%20rustic%20form%20of%20pan-fried%20hashbrowns.%20The%20recipe%20is%20from%20here%20and%20since%20this%20wonderful%20lady%20did%20all%20that%20research%20to%20find%20her%20perfect%20rosti%20recipe,%20all%20I%20had%20to%20do%20was%20follow%20it.%20On%20seeing%20the%20various%20other%20ingredients%20(like%20bacon,%20scallions,%20cheese,%20onion,%20fresh%20herbs%20etc)%20that%20could%20be%20added%20in%20a%20r%C3%B6sti,%20I%20included%20a%20couple%20more%20in%20mine%20but%20I%20stuck%20to%20her%20basic%20recipe,%20except%20for%20the%20goose%20fat.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EParboil%20the%20potato%20and%20chill%20in%20the%20refrigerator%20for%20a%20few%20hours.%3C/p%3E%3Cp%3EGrate%20the%20potato.%20Mine%20were%20a%20bit%20fine%20but%20coarser%20gratings%20would%20be%20even%20better.%3C/p%3E%3Cp%3EMix%20in%20the%20grated%20onion,%20cheese%20and%20the%20seasonings.%3C/p%3E%3Cp%3EHeat%20a%20heavy%20bottomed%20pan%20and%20melt%20a%20tsp%20of%20the%20butter.%20Add%20the%20seasoned%20potatoes%20mixture%20in%20an%20even%20layer%20and%20press%20them%20down%20to%20flatten%20them%20into%20a%20flat%20cake.%20Cook%20for%205-6%20minutes,%20until%20crispy%20and%20lightly%20browned.%3C/p%3E%3Cp%3ELoosen%20and%20remove%20to%20a%20plate.%20Add%20the%20remaining%20butter%20to%20the%20pan%20and%20slide%20back%20the%20rosti%20to%20cook%20the%20other%20side.%20Another%205-6%20minutes%20until%20browned.%20Serve.%3C/p%3E%3Cp%3ENote:%20I%20used%20an%20omelette%20pan%20and%20made%20three%20smaller%20rostis%20from%20this.%20Traditionally,%20it%20is%20more%20like%20a%20pie%20that%20is%20cut%20into%20wedges%20and%20served.%3C/p%3E){kind=link}
