Rajma Peerkangai (Ridge Gourd) Sambar Recipe
Ingredients:
- Rajma – 1 cup, soaked overnight and boiled
- Toor Dal – 1 cup, boiled
- Peerkangai (Ridge Gourd) – 1, cleaned, chopped
- Carrot – 2, finely chopped
- Tamarind Extract – 1 cup
- Sambar Powder – 2 tblsp
- Onion – 1, chopped
- Tomato – 1, chopped
- Vendhaya Keerai – handful, chopped
- Salt as per taste
- Mustard Seeds – little
- Oil as required
Method:
1. Heat little oil in a pan.
2. Fry the mustard seeds for 20 seconds.
3. Add the onions, tomatoes and carrot.
4. Saute well.
5. Add tamarind extract, sambar powder, peerkangai and salt.
6. Add the dal, rajma, keerai and bring to a boil.
7. Simmer for 2 to 3 minutes.
8. Serve hot.
