- 1 tbsp Lime juice
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 cup red bell pepper
- 2/3 cup onion (red, white or green)
- 1 jalapeno pepper
- ¾ cup cucumber
- 3/4 cup vinegar—white or rice
- ¾ cup water
- 1 tbsp sugar
- 1 tsp salt
- ½ tsp pepper
- 3 pkg of Ramen noodles (3 oz per pkg)
- 2/3 cup peanuts
- 2/3-3/4 cup Ken’s Asian Sesame salad dressing
