Ingredientes

  • 1 sm Yellow Onion, minced
  • 1 sm Green Bell Pepper, minced
  • 2 stalk Celery, minced
  • 2 x Cloves Garlic, chopped
  • 2 lb Course grnd Chicken
  • 1 can (10 ounce) Rotel Tomatoes with Chiles
  • 1 can (4 ounce) diced green Chiles
  • 1 Tbsp. Worcestershire Sauce
  • 2 tsp Chile Pwdr
  • 1 tsp Grnd Cumin
  • 1 tsp Celery Salt
  • 1/2 tsp Cracked Black Pepper
  • 1 Tbsp. Menudo Spice mix
  • 2 x Limes, Juice of
  • 2 Tbsp. Chicken Stock Base
  • 2 quart Bottled Water
  • 2 c. Grated Swiss Cheese
  • 1/2 c. Fresh Cilantro Leaves
  •     Lime wedges for garnish
  • 1 bag (large) of Tortilla Strips (unsalted)

Direcciones

  1. In 2 Tbsp Extra virgin olive oil, saute/fry' the onion, pepper, celery, and garlic. Empty into a Stock Pot.
  2. In same frying pan saute/fry' the chicken. Add in to the pot. Add in ingredients 6 thru 16. Mix, cover and simmer a minimum of 20 min, stirring several times.
  3. To serve put a large handfull of tortilla strips into each bowl. Add in soup; top with the grated cheese.
  4. Garnish with the fresh Cilantro, Cool Tecate and Lime wedges.
