Receta Ramon's Tortilla Soup

Ingredientes
- 1 sm Yellow Onion, minced
- 1 sm Green Bell Pepper, minced
- 2 stalk Celery, minced
- 2 x Cloves Garlic, chopped
- 2 lb Course grnd Chicken
- 1 can (10 ounce) Rotel Tomatoes with Chiles
- 1 can (4 ounce) diced green Chiles
- 1 Tbsp. Worcestershire Sauce
- 2 tsp Chile Pwdr
- 1 tsp Grnd Cumin
- 1 tsp Celery Salt
- 1/2 tsp Cracked Black Pepper
- 1 Tbsp. Menudo Spice mix
- 2 x Limes, Juice of
- 2 Tbsp. Chicken Stock Base
- 2 quart Bottled Water
- 2 c. Grated Swiss Cheese
- 1/2 c. Fresh Cilantro Leaves
- Â Â Lime wedges for garnish
- 1 bag (large) of Tortilla Strips (unsalted)
Direcciones
- 1. In 2 Tbsp Extra virgin olive oil, saute/fry' the onion, pepper, celery, and garlic. Empty into a Stock Pot.
- 2. In same frying pan saute/fry' the chicken. Add in to the pot. Add in ingredients 6 thru 16. Mix, cover and simmer a minimum of 20 min, stirring several times.
- 3. To serve put a large handfull of tortilla strips into each bowl. Add in soup; top with the grated cheese.
- 4. Garnish with the fresh Cilantro, Cool Tecate and Lime wedges.
