Ingredientes

  • 2 1/4 c. all-purpose flour
  • 1 c. sugar divided
  • 3/4 c. butter (1 1/2 sticks)
  • 1/2 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 c. lowfat sour cream
  • 2 x Large eggs divided
  • 1 tsp almond extract
  • 8 ounce cream cheese softened
  • 1/2 c. raspberry preserves
  • 1/2 c. sliced almonds

Direcciones

  1. Preheat oven to 350 degrees. Prepare muffin tins with non-stick spray.
  2. In large bowl, combine flour and 3/4 c. of sugar. Cut in butter till crumbly; reserve 1 c. of this mix. To remaining crumb mix add in baking pwdr, soda, salt, lowfat sour cream, 1 egg and almond extract. Spoon mix into muffin tins.
  3. Combine cream cheese, 1/4 c. sugar and 1 egg. Spoon cream cheese mix over batter in pans. Spoon preserves over cream cheese mix. Add in almonds to reserved crumb mix and sprinkle over muffin tops. Bake for 20 min.
  4. Makes 15 muffins.
