Receta Raspberry Cream Cheese Muffins

Ingredientes
- 2Â 1/4 c. all-purpose flour
- 1 c. sugar divided
- 3/4 c. butter (1 1/2 sticks)
- 1/2 tsp baking pwdr
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 c. lowfat sour cream
- 2 x Large eggs divided
- 1 tsp almond extract
- 8 ounce cream cheese softened
- 1/2 c. raspberry preserves
- 1/2 c. sliced almonds
Direcciones
- Preheat oven to 350 degrees. Prepare muffin tins with non-stick spray.
- In large bowl, combine flour and 3/4 c. of sugar. Cut in butter till crumbly; reserve 1 c. of this mix. To remaining crumb mix add in baking pwdr, soda, salt, lowfat sour cream, 1 egg and almond extract. Spoon mix into muffin tins.
- Combine cream cheese, 1/4 c. sugar and 1 egg. Spoon cream cheese mix over batter in pans. Spoon preserves over cream cheese mix. Add in almonds to reserved crumb mix and sprinkle over muffin tops. Bake for 20 min.
- Makes 15 muffins.
