%20every%20spring.%20%20I%20even%20got%20my%20husband%20hooked%20on%20them%20after%20we%20were%20married%20enough%20that%20one%20year%20we%20took%20a%20break%20from%20the%20convention%20I%20attended%20and%20drove%20out%20to%20tour%20their%20factory.%3C/p%3E%3Cp%3EAfter%20a%20lot%20of%20thought%20and%20some%20trials,%20%20I%20received%20the%20best%20compliment%20on%20my%20version%20of%20the%20raspberry%20filled%20chocolates%20from%20my%20husband,%20%E2%80%9CThey%20taste%20like%20those%20Ethel%20M%20chocolates%20we%20used%20to%20get.%E2%80%9D%3C/p%3E%3Cp%3EI%20used%20%20candy%20molds%20%20that%20I%20originally%20purchased%20to%20make%20chocolate%20covered%20cherries,%20but%20they%20were%20much%20too%20small.%3C/p%3E%3Cp%3EMine%20are%20not%20as%20pretty%E2%80%A6okay,%20they%20are%20not%20pretty%20at%20all%E2%80%A6but,%20they%20do%20taste%20yummy.%3C/p%3E%3Cp%3EI%20used%20white%20coating%20as%20it%20is%20spring,%20but%20you%20can%20use%20whatever%20chocolate%20you%20like.%3C/p%3E%3Cp%3EHere%20is%20how%20I%20made%20them:%3C/p%3E%3Cp%3ERecipe:%20Raspberry%20Filled%20Chocolates%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EInstructions:%3C/p%3E%3Cp%3EPlace%20frozen%20raspberries%20in%20a%20small%20sauce%20pan%20with%20sugar.%3C/p%3E%3Cp%3EHeat%20until%20sugar%20has%20dissolved%20into%20raspberry%20juice%20mixture%20and%20raspberries%20are%20falling%20apart.%3C/p%3E%3Cp%3EStrain%20mixture%20to%20remove%20seeds,%20etc.%3C/p%3E%3Cp%3EReturned%20strained%20puree%20to%20pan%20and%20continue%20to%20heat%20until%20mixture%20has%20thickened.%3C/p%3E%3Cp%3EPlace%20in%20refrigerator%20to%20cool.%3C/p%3E%3Cp%3EBeat%20butter,%20sugar,%20vanilla,%20and%20salt%20until%20mixture%20is%20light%20and%20fluffy.%3C/p%3E%3Cp%3EBeat%20in%20cooled%20raspberry%20puree%20adding%20a%20little%20at%20a%20time%20until%20desired%20taste%20is%20achieved.%3C/p%3E%3Cp%3EMeanwhile,%20bring%20water%20in%20bottom%20of%20a%20double%20boiler%20or%20pan%20to%20a%20boil.%20Remove%20from%20heat,%20add%20chocolate%20to%20top%20of%20double%20boiler%20or%20bowl%20and%20place%20over%20hot%20water%20to%20melt.%20(Temper%20chocolate%20if%20not%20using%20coating%20pieces).%3C/p%3E%3Cp%3EOnce%20chocolate%20is%20melted%20scoop%20chocolate%20to%20fill%20molds%20and%20dump%20excess%20into%20a%20bowl.%20Use%20an%20off-set%20spatula%20to%20clear%20extra%20chocolate%20from%20surface%20of%20the%20mold.%3C/p%3E%3Cp%3EFill%20a%20plastic%20piping%20bag%20or%20plastic%20zip%20bag%20with%20corner%20cut%20off%20with%20raspberry%20mixture.%3C/p%3E%3Cp%3EPipe%20mixture%20into%20mold%20after%20chocolate%20has%20started%20to%20set.%20Leave%20at%20least%201/8%20inch%20of%20space%20from%20the%20top%20of%20the%20mold%20to%20apply%20bottom%20on%20chocolate.%3C/p%3E%3Cp%3EUsing%20a%20plastic%20squeeze%20bottle%20or%20piping%20bag,%20fill%20remaining%20gap%20in%20mold%20with%20chocolate.%20Tapping%20mold%20on%20hard%20surface%20to%20settle%20chocolate.%3C/p%3E%3Cp%3EPlace%20in%20freezer%20for%20a%20few%20minutes%20so%20the%20chocolate%20will%20easily%20release.%3C/p%3E%3Cp%3ETurn%20out%20onto%20parchment%20or%20wax%20paper-lined%20tray.%3C/p%3E%3Cp%3EStore%20in%20a%20cool%20place.%3C/p%3E%3Cp%3ENotes:%3C/p%3E%3Cp%3EIf%20you%20don%E2%80%99t%20have%20a%20candy%20mold,%20you%20can%20still%20make%20these%20by%20dipping%20them.%20Just%20set%20raspberry%20mixture%20in%20the%20refrigerator%20several%20hours%20or%20over%20night,%20then%20roll%20into%20balls.%20Place%20balls%20in%20freezer%20for%20a%20few%20minutes%20to%20firm,%20then%20dip%20in%20melted%20chocolate.%3C/p%3E%3Cp%3ECopyright%20%C2%A9%202014.%3C/p%3E%3Cp%3ERecipe%20by%20Paula,%20A%20Simple%20Home%20Cook.%3C/p%3E){kind=link}
