,%20and%20I'm%20behind%20on%20posting%20them.%20So,%20here%20I%20am,%20blogging%20about%20the%20cucumber%20series%20-teehee.%20I%20have%20quite%20a%20few%20lined%20up%20in%20my%20queue%20as%20I've%20been%20slacking%20off%20and%20I%20only%20post%20twice%20a%20week.%20I%20have%20to%20say%20August%20is%20a%20crazy%20busy%20month%20for%20me.%20Birthdays,%20weddings,%20special%20occasions,%20events,%20personal%20arrangements,%20etc.%20Man%20they%20come%20every%20weekend!%3C/p%3E%3Cp%3EToday's%20cucumber%20series%20%23%203%20is%20raw%20cucumber%20salad%20-South%20East%20Asian%20style.%20I%20don't%20like%20cucumber%20cold%20soup.%20It%20doesn't%20get%20along%20well%20with%20me.%20So,%20the%20better%20way%20for%20me%20is%20to%20make%20a%20salad.%20Plus,%20I%20already%20made%20a%20soup%20on%20the%20last%20post.%20Almost%20everything%20on%20this%20salad%20is%20raw.%20The%20dressing%20is%20very%20close%20to%20the%20one%20on%20the%20fried%20egg%20salad;%20just%20a%20few%20components%20are%20different.%20It's%20also%20used%20for%20papaya%20salad%20(Som%20Tom)%20in%20Thai%20cuisine.%20(Stella,%20here's%20to%20you!%20I%20hope%20I%20answered%20your%20question%20and%20that%20papaya%20tree%20near%20you%20can%20be%20used%20soon..smile)%3C/p%3E%3Cp%3EPapaya%20salad%20has%202%20different%20kinds%20-Thai%20style%20and%20Laotian%20style%20(with%20fermented%20fish%20and%20salted%20fresh%20water%20crab).%20They%20both%20are%20commonly%20found%20in%20Thailand%20and%20are%20famous%20in%20the%20North%20East%20of%20Thailand.%20The%20dressing%20I%20refer%20to%20on%20this%20post%20is%20the%20Thai%20version.%3C/p%3E%3Cp%3ECucumber%20alone%20doesn't%20ring%20my%20belly%20bell%20but%20other%20components%20help%20bring%20the%20dish%20right%20down%20my%20alley.%20Traditionally,%20a%20mortar%20and%20pestle%20are%20key%20pieces%20of%20equipment%20to%20make%20the%20dish.%20You%20pound,%20mix,%20and%20turn%20in%20rhythm%20like%20a%20popping%20dance.%20Since%20I%20don't%20have%20them,%20I%20need%20to%20find%20a%20way%20to%20fix%20my%20craving.%20It%20works%20just%20fine%20and%20I'm%20satisfied%20how%20it%20turned%20out.%20You%20will%20see%20those%20common%203%20ingredients%20-lime%20juice,%20fish%20sauce,%20and%20sugar,%20again.%20Except%20this%20time%20we%20used%20palm%20sugar%20instead.%20I%20also%20found%20a%20good%20instructional%20video%20on%20how%20to%20make%20papaya%20salad%20and%20would%20like%20to%20share,%20in%20case%20you%20haven't%20experienced%20it!%20You%20will%20then%20%22kinda%22%20agree%20with%20me%20that%20my%20ad%20hoc%20method%20works%20-smile.%3C/p%3E%3Cp%3EI%20found%20a%20good%20palm%20sugar%20and%20in%20fact%20it%20was%20my%20first%20time%20working%20with%20this%20bad%20boy.%20It%20was%20hard%20like%20stone!%20I%20knew%20I%20needed%20it%20melted%20but%20how?%20I%20cut%20it%20in%20a%20big%20chunk%20and%20was%20hoping%20a%20microwave%20would%20help.%20Nah%20ah..not%20at%20all,%20microwave%20was%20a%20bad%20idea.%20After%20it%20melted,%20it%20turned%20hard%20like%20a%20rock%20again;%20even%20harder.%20I%20went%20to%20another%20Asian%20market%20weeks%20after%20and%20saw%20different%20type%20of%20palm%20sugar.%20It%20was%20smaller%20and%20softer%20but%20didn't%20smell%20as%20good%20as%20the%20one%20I%20have.%3C/p%3E%3Cp%3EHere's%20my%20ad%20hoc%20method.%3C/p%3E%3Cp%3ESince%20my%20palm%20sugar%20is%20a%20hard%20big%20round%20disk,%20I%20used%20a%20cheese%20grater%20to%20grate%20it.%20It%20worked%20like%20magic.%20So,%20I%20grated%20it%20for%20a%20little%20over%201/2%20cup%20and%20the%20rest%20was%20put%20back%20in%20a%20zip%20lock.%20I%20then%20used%20a%20knife%20tapping%20on%20cut%20green%20beans%20just%20like%20when%20you%20tap%20garlic%20one%20at%20a%20time.%20Cut%20cucumber%20into%20strips,%20and%20halved%20cherry%20tomatoes.%20Mix%20with%20dressing%20and%20use%20a%20wooden%20spoon%20to%20pound%20and%20mix.%20Oh,%20yes%20of%20course,%20I%20threw%20in%20dry%20shrimps%20and%20roasted%20chopped%20peanuts%20for%20sure!%3C/p%3E%3Cp%3E3%20Bird's%20eye%20chillies%20(medium%20spicy)%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPut%20garlic%20and%20chillies%20in%20a%20food%20processor;%20pulse%205%20times%20or%20until%20they're%20coarsely%20chopped%3C/p%3E%3Cp%3EPlace%20garlic%20chili%20mixture%20in%20a%20bowl.%20Add%20palm%20sugar,%20fish%20sauce,%20and%20lime%20juice.%20Whisk%20well%20until%20sugar%20dissolves.%20Taste%20to%20correction%20or%20your%20desire.%3C/p%3E%3Cp%3EUse%20a%20knife%20tapping%20on%20cut%20green%20beans%20just%20like%20when%20you%20tap%20garlic%20one%20at%20a%20time.%3C/p%3E%3Cp%3EAdd%20all%20the%20raw%20veggies%20-cucumber,%20carrots,%20tomatoes,%20and%20green%20beans%20in%20a%20big%20bowl.%20Pour%20salad%20dressing%20over.%3C/p%3E%3Cp%3EUse%20a%20wooden%20spoon%20to%20mix,%20pound,%20and%20turn%20until%20everything%20is%20coated%20with%20dressing.%20This%20will%20take%20a%20few%20mins.%3C/p%3E%3Cp%3EAdd%20dry%20shrimps,%20and%20peanuts%20except%20the%202%20tbs.%20Mix%20and%20turn%20one%20more%20round.%3C/p%3E%3Cp%3
