%3C/p%3E%3Cp%3EIn%20the%20meantime,%20my%20energy%20meter%20has%20been%20pegged%20out%20at%20%22zilch%22.%20%20I%20can't%20even%20remember%20the%20last%20time%20I%20actually%20made%20a%20true%20and%20decent%20meal%20around%20here.%20%20(In%20other%20news,%20my%20kids,%20who%20because%20of%20my%20busyness%20have%20been%20served%20fast-and-easy%20things%20like%20chicken%20nuggets,%20macaroni%20and%20cheese,%20sandwiches,%20and%20cereal,%20have%20recently%20commented%20that%20they%20think%20I'm%20starting%20to%20be%20a%20great%20cook%20again.%20%20I%20am%20not%20amused.)%3C/p%3E%3Cp%3EAll%20that%20to%20say%20that%20I'm%20glad%20it's%20Secret%20Recipe%20Club%20time%20again.%20%20It%20got%20me%20back%20into%20the%20kitchen,%20just%20in%20time%20to%20make%20these%20colorful,%20crunchy%20bars%20for%20a%20church%20picnic%20today.%3C/p%3E%3Cp%3EI%20was%20assigned%20to%20Margaret's%20blog:%20%22Tea%20and%20Scones%22.%20%20Margaret%20has%20a%20vast%20array%20of%20wonderful%20items%20(from%20all%20over%20the%20globe!)%20to%20choose%20from.%20%20I%20made%20my%20selection%20based%20on%20what%20I%20had%20on%20hand:%20%20Brenda's%20Veggie%20Bars.%3C/p%3E%3Cp%3EI%20made%20a%20few%20modifications%20to%20the%20recipe%20including%20swapping%20out%20the%20crescent%20roll%20dough%20for%20puff%20pastry%20sheets,%20adding%20pesto%20to%20the%20cream%20cheese/mayonnaise%20mixture,%20and%20topping%20with%20feta%20cheese.%3C/p%3E%3Cp%3ETo%20begin,%20I%20thawed%20a%20sheet%20of%20puff%20pastry%20dough%20(overnight%20in%20the%20fridge),%20rolled%20it%20out%20slightly,%20and%20pricked%20it%20with%20a%20fork%20to%20prevent%20it%20from%20puffing%20while%20it%20baked.%3C/p%3E%3Cp%3EThen%20I%20mixed%20cream%20cheese,%20mayonnaise,%20pesto%20and%20salt.%3C/p%3E%3Cp%3EDespite%20the%20fork%20pricks,%20the%20pastry%20still%20puffed.%20%20I%20simply%20applied%20pressure%20to%20the%20top%20of%20the%20pastry%20as%20soon%20as%20I%20removed%20it%20from%20the%20oven%20and%20gently%20deflated%20it.%3C/p%3E%3Cp%3EI%20chopped%20a%20colorful%20array%20of%20fresh%20veggies.%20%20Don't%20you%20just%20love%20to%20eat%20happy%20summer%20colors?%3C/p%3E%3Cp%3EAfter%20spreading%20the%20(cooled)%20pastry%20with%20the%20cream%20cheese%20mixture,%20I%20added%20a%20layer%20of%20spinach,%3C/p%3E%3Cp%3EScattered%20over%20the%20other%20vegetables,%3C/p%3E%3Cp%3EAnd%20sprinkled%20with%20feta%20cheese.%3C/p%3E%3Cp%3EThen%20I%20cut%20the%20pastry%20into%2016%20two-inch%20squares.%3C/p%3E%3Cp%3EA%20cool%20and%20refreshing%20accompaniment%20to%20a%20summer%20meal!%3C/p%3E%3Cp%3ERaw%20Veggie%20Tartlet%20Bites%3C/p%3E%3Cp%3ETo%20prepare:%20preheat%20oven%20to%20400%20degrees%20F.%20%20Line%20a%20baking%20sheet%20with%20parchment%20paper.%20%20Slightly%20roll%20out%20the%20thawed%20puff%20pastry%20dough.%20%20Prick%20pastry%20thoroughly%20with%20a%20fork.%20%20Bake%20for%2012-15%20minutes,%20or%20until%20golden%20brown.%20%20Remove%20pastry%20from%20oven%20and%20allow%20to%20cool%20to%20room%20temperature.%3C/p%3E%3Cp%3EMix%20cream%20cheese,%20mayonnaise,%20pesto%20and%20salt%20together%20until%20smooth%20(I%20used%20my%20electric%20mixer,%20but%20a%20sturdy%20wooden%20spoon%20would%20do%20the%20trick%20as%20long%20as%20the%20cream%20cheese%20is%20at%20room%20temperature).%20%20Spread%20mixture%20over%20cooled%20pastry.%3C/p%3E%3Cp%3ELay%20spinach%20leaves%20over%20cream%20cheese%20mixture.%20%20Scatter%20fresh%20vegetables%20over%20spinach,%20and%20sprinkle%20with%20cheese.%3C/p%3E%3Cp%3ECut%20the%20pastry%20into%20four%20large%20squares%20(one%20slice%20down%20the%20center%20vertically%20and%20then%20another%20horizontally).%20%20Then%20slice%20each%20square%20into%20quarters.%20%20You%20will%20end%20up%20with%2016%20small%20squares.%3C/p%3E%3Cp%3EServe%20immediately%20or%20refrigerate%20for%20up%20to%202%20hours.%20%20(Pastry%20may%20become%20soggy%20after%202%20hours.)%3C/p%3E%3Cp%3ERecipe%20from:%20%20Tea%20and%20Scones/variation%20of%20a%20recipe%20from%20a%201990s%20Southern%20Living%20recipe.%3C/p%3E){kind=link}
