%20This%20way%20I%20don't%20feel%20like%20I'm%20clogging%20my%20arteries%20with%20every%20bite!%3C/p%3E%3Cp%3EFor%20my%20first%20attempt%20from%20this%20book,%20I%20chose%20the%20Bihari%20Chicken%20Biryani%20(pg%20137).%20It%20is%20low%20on%20spices,%20not%20too%20many%20ingredients,%20quite%20fast%20and%20can%20be%20cooked%20in%20one%20pot,%20%20so%20not%20much%20washing%20and%20rather%20easy%20to%20assemble.%3C/p%3E%3Cp%3EI%20halved%20the%20quantities%20in%20the%20book,%20adjusted%20some%20others%20and%20minimised%20the%20ghee/oil.%20I%20also%20decreased%20the%20green%20chilli%20paste%20quantity%20as%20BB%20was%20recovering%20from%20food%20poisoning.%20I%20would%20use%20much%20more%20chilli%20than%20recommended,%20the%20next%20time%20I%20cook%20this%20dish,%20just%20to%20give%20it%20a%20bit%20of%20bite.%3C/p%3E%3Cp%3EThis%20is%20a%20very%20mildly%20flavored%20biryani,%20more%20like%20a%20pulao,%20so%20its%20not%20what%20you%20would%20traditionally%20expect%20of%20a%20biriyani.%20It%20did%20remind%20me%20of%20my%20Egg%20Pulao%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EMix%20together%20the%20ginger%20paste,%20garlic%20paste,%20chilli%20paste,%20onion%20paste,%20khus%20khus%20paste,%20yoghurt%20and%20pepper%20powder%20with%20salt%20to%20taste.%20(I%20ground%20the%20khus%20khus%20first%20and%20then%20added%20the%20ginger,%20garlic%20and%20onions%20in%20the%20mixi)%3C/p%3E%3Cp%3EMarinate%20the%20chicken%20in%20this%20mixture%20for%20at%20least%20one%20hour.%3C/p%3E%3Cp%3EWash%20and%20soak%20the%20rice%20for%20about%2020%20minutes,%20drain%20and%20set%20aside.%3C/p%3E%3Cp%3EAssemble:%3C/p%3E%3Cp%3EHeat%201/2%20tsp%20ghee%20and%20some%20oil%20in%20the%20pan%20(I%20used%20a%20pressure%20cooker)%3C/p%3E%3Cp%3EPut%20the%20whole%20spices%20in%20-%20Cardamom,%20cinnamon,%20cloves,%20bay%20leaves%20and%20cumin%20seeds.%3C/p%3E%3Cp%3EStir%20fry%20the%20spices%20and%20then%20add%20the%20chicken%20and%20the%20marinade.%3C/p%3E%3Cp%3ECook%20till%20the%20oil%20rises%20to%20the%20surface%20(this%20is%20essential,%20otherwise%20the%20onion%20paste%20will%20not%20be%20cooked%20and%20that%20doesn't%20taste%20good%20at%20all%20-%20if%20you%20feel%20your%20chicken%20is%20getting%20overcooked%20but%20the%20masala%20is%20not%20yet%20cooked,%20take%20out%20the%20chicken%20for%20awhile%20and%20keep%20frying%20the%20masala)%20and%20the%20chicken%20turns%20golden%20brown.%3C/p%3E%3Cp%3EAdd%20the%20rice%20and%20fry%20for%202-3%20minutes.%3C/p%3E%3Cp%3EThen%20add%20water%20upto%20an%20inch%20above%20the%20rice%20and%20chicken.%3C/p%3E%3Cp%3EBring%20to%20a%20boil.%3C/p%3E%3Cp%3EAdd%20a%20little%20more%20ghee%3C/p%3E%3Cp%3ELower%20the%20flame.%3C/p%3E%3Cp%3ECook%20covered%20for%2015-20%20minutes%20till%20done%20(3%20whistles%20in%20a%20Hawkins%20pressure%20cooker)%3C/p%3E%3Cp%3EServe%20hot%20with%20chilled%20raita%3C/p%3E%3Cp%3EPratibha%20Karan's%20Biryani%20is%20not%20yet%20available%20on%20Amazon,%20but%20it%20is%20available%20in%20most%20Indian%20bookstores.%20However,%20her%20other%20book,%20on%20Hyderbadi%20cuisine,%20can%20be%20purchased%20on%20Amazon.%3C/p%3E%3Cp%3EEquipment%20Used:%3C/p%3E){kind=link}
