,%20I'm%20currently%20making%20really%20light,%20easy%20to%20digest%20food.%3C/p%3E%3Cp%3EThe%20other%20day,%20I%20finally%20found%20Bocconcini%20in%20the%20market%20and%20knew%20I%20had%20to%20make%20a%20salad%20out%20if%20it.%20But,%20I%20couldn't%20find%20any%20basil,%20no%20matter%20where%20I%20tried.%20So%20I%20decided%20to%20combine%20it%20with%20lettuce%20and%20cherry%20tomatoes%20instead.%3C/p%3E%3Cp%3EInstead%20of%20one%20of%20my%20regular%20dressings,%20I%20thought%20I%20would%20try%20something%20new.%20The%20Sood%20Family%20Cookbook%20is%20the%20most%20recent%20addition%20to%20my%20Cookbook%20Shelf,%20so%20I%20started%20randomly%20browsing%20through%20it%20and%20chose%20a%20mustard%20dressing%20from%20the%20book.%3C/p%3E%3Cp%3EThe%20Sood%20Family%20Cookbook%20is%20a%20brilliant%20collection%20of%20recipes%20by%20Aparna%20Jain,%20from%20various%20members%20of%20her%20Himachali%20family.%20While%20their%20roots%20might%20be%20Himachali,%20the%20recipes%20are%20much%20more%20global.%20She%20does%20share%20a%20lot%20of%20Pahaadi%20recipes%20from%20chaachwale%20alu%20and%20fiddlehead%20ferns%20to%20Rali%20mili%20dal%20and%20Pahaadi%20Mutton.%20The%20book%20is%20divided%20into%20Breakfast,%20Comfort%20Food%20(Pahaadi%20recipes%20and%20her%20favourite%20family%20recipes,%20there%20are%20a%20lot%20of%20Manglorean%20recipes%20in%20this%20section,%20courtesy%20her%20Sister-in-law%20Nita,%20the%20light%20and%20healthy%20section%20of%20salads%20(from%20where%20I%20got%20this%20recipe),%20from%20near%20and%20far%20(recipes%20range%20from%20I-won't-cook%20Tagliatelle%20to%20Hangover%20Vodka%20Pasta%20and%20Dushmani%20Chicken)%20soups,%20snacks,%20chutneys,%20drinks%20and%20desserts.%3C/p%3E%3Cp%3EThe%20index%20at%20the%20beginning%20of%20the%20book%20is%20easily%20color%20coded%20-%20green%20for%20veg,%20yellow%20for%20dishes%20with%20egg%20and%20red%20for%20non-vegetarian%20dishes.%20There's%20a%20very%20good%20balance%20of%20veg%20and%20non%20veg%20dishes%20in%20The%20Sood%20Family%20Cookbook.%3C/p%3E%3Cp%3EThe%20recipes%20are%20quite%20straightforward%20and%20easy%20to%20try,%20so%20this%20book%20makes%20a%20great%20addition%20to%20any%20collection.%3C/p%3E%3Cp%3EIngredients%20:%3C/p%3E%3Cp%3E500%20gms%20bocconcini%3C/p%3E%3Cp%3EMethod%20:%3C/p%3E%3Cp%3ERoughly%20tear%20the%20lettuce%20leaves%20and%20place%20in%20a%20serving%20bowl%3C/p%3E%3Cp%3ETear%20the%20bocconcini%20into%202%20(tearing%20gives%20a%20better%20texture%20and%20flavour%20than%20slicing%20in%20two)%20and%20add%20it%20to%20the%20lettuce.%3C/p%3E%3Cp%3EPick%20up%20the%20cherry%20tomatoes%20and%20holding%20them%20inside%20the%20salad%20bowl,%20press%20slightly%20(with%20the%20tomato%20facing%20downward)%20%20and%20squeeze%20with%20youfingers,%20so%20they%20squish%20a%20bit%20and%20release%20their%20juices.%3C/p%3E%3Cp%3EToss%20Roughly.%3C/p%3E%3Cp%3EPut%20all%20the%20dressing%20ingredients%20in%20a%20small%20bowl.%20Whip%20with%20a%20fork%20until%20it%20emulsifies.%3C/p%3E%3Cp%3ESlowly%20fold%20the%20required%20amount%20of%20dressing%20into%20the%20salad,%20without%20disturbing%20or%20pressing%20down%20on%20the%20salad%20too%20much.%20Don't%20overdose%20on%20the%20dressing.%3C/p%3E%3Cp%3EIf%20you%20want%20to%20make%20a%20meal%20of%20it,%20serve%20with%20warm%20or%20toasty%20bread.%3C/p%3E){kind=link}
