%3C/p%3E%3Cp%3EAll%20I%20had%20was%20some%20boneless%20chicken%20marinating%20in%20curd,%20salt%20and%20ginger%20garlic%20paste%20that%20I%20had%20taken%20out%20of%20the%20fridge%20and%20I%20had%20originally%20planned%20to%20make%20dhal,%20chawal,%20roti,%20sabji,%20chicken%20for%20dinner.%20But%20obviously%20that%20plan%20was%20shot.%20I%20couldn't%20get%20all%20that%20ready%20in%2020%20minutes,%20so%20biryani%20to%20the%20rescue%20it%20was.%20I%20didn't%20have%20time%20for%20a%20heavy%20marinade,%20so%20I%20went%20for%20a%20fragrant%20rice%20pulao%20flavoured%20with%20Kerala%20spices.%20It%20tasted%20really%20good,%20so%20here's%20the%20recipe.%3C/p%3E%3Cp%3EIngredients%20:%3C/p%3E%3Cp%3EFreshly%20chopped%20coriander%20leaves%20to%20garnish%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EWash%20the%20rice%20and%20soak%20(at%20least%20as%20long%20as%20it%20takes%20you%20to%20prep%20the%20other%20ingredients%20or%20about%2020%20minutes)%20and%20then%20drain.%3C/p%3E%3Cp%3ERoughly%20crush%20the%20black%20pepper%20and%20saunf%20in%20a%20mortar%20and%20pestle.%20(I%20don't%20like%20getting%20cardamom%20bits%20in%20my%20mouth%20when%20eating,%20so%20I%20crushed%20the%20cardamom%20too)%3C/p%3E%3Cp%3EHeat%20the%20ghee%20in%20a%20pressure%20cooker.%3C/p%3E%3Cp%3EIf%20using%20the%20nuts,%20quickly%20fry%20them%20in%20ghee%20on%20high%20heat%20and%20remove%20drained%20nuts%20from%20pan%20when%20browned.%3C/p%3E%3Cp%3EThe%20ghee%20will%20change%20colour,%20but%20that's%20nothing%20to%20worry%20about.%3C/p%3E%3Cp%3EBring%20it%20back%20up%20to%20smoking%20point%20and%20add%20the%20cinnamon,%20followed%20by%20cardamom,%20cloves%20and%20all%20spice%20flower.%3C/p%3E%3Cp%3EThen%20add%20your%20roughly%20crushed%20spices%20and%20bay%20leaves%20and%20give%20a%20quick%20stir.%3C/p%3E%3Cp%3EWhen%20the%20spices%20start%20emitting%20the%20cooked%20aroma,%20add%20the%20sliced%20onions%20and%20fry%20until%20almost%20brown.%3C/p%3E%3Cp%3EAdd%20the%20marinated%20chicken%20with%20all%20its%20liquids%20-%20if%20using%20boneless%20chicken,%20just%20give%20it%20a%20minute%20or%20so%20to%20brown%20a%20bit,%20if%20using%20chicken%20with%20bone,%20wait%20till%20the%20chicken%20is%20semi%20cooked.%3C/p%3E%3Cp%3EAdd%20the%20soaked%20and%20drained%20rice%20and%20give%20a%20quick%20stir.%3C/p%3E%3Cp%3ENow%20add%20the%20green%20chillies%20and%20fried%20cashewnuts%20(if%20using)%3C/p%3E%3Cp%3EAdd%20water%20to%20cover%20upto%201/2%20inch%20above%20and%20adjust%20salt%20to%20taste.%3C/p%3E%3Cp%3ECover%20and%20pressure%20cook%20until%20done.%20(I%20normally%20use%203%20whistles%20on%20high%20and%20then%201%20whistle%20on%20sim%20and%20let%20the%20pressure%20all%20escape%20on%20its%20own,%20before%20opening%20the%20cooker)%3C/p%3E%3Cp%3EGarnish%20with%20fresh%20coriander%20and%20serve%20with%20a%20cool%20raita%3C/p%3E){kind=link}
