.%20However%20quite%20a%20few%20of%20them%20were%20vegetarian%20and%20since%20we%20hardly%20eat%20potatoes%20in%20this%20house%20anymore,%20I%20was%20wondering%20how%20to%20make%20a%20vegetarian%20coconut%20milk%20curry.%20(the%20standard%20Manglorean%20way%20to%20convert%20a%20meat%20curry%20into%20a%20vegetarian%20one,%20is%20to%20make%20it%20with%20potatoes%20or%20eggs)%3C/p%3E%3Cp%3EThen,%20I%20remembered%20my%20friend%20Anju%20in%20Cairo,%20(who%20is%20from%20Kerala)%20had%20once%20made%20this%20lovely%20stew%20with%20rajma.%20Drawing%20on%20that%20as%20inspiration,%20I%20followed%20the%20Manglorean%20recipe%20for%20mutton%20stew%20but%20substituted%20the%20meat%20with%20rajma.%20Then%20I%20decided%20it%20needed%20some%20fresh%20veggies%20too%20and%20added%20a%20chopped%20carrot%20and%20a%20potato%20(stews%20need%20at%20least%20one%20potato%20to%20help%20thicken%20them%20up%20a%20bit).%20I%20was%20quite%20happy%20with%20the%20result.%3C/p%3E%3Cp%3EThis%20recipe%20results%20in%20a%20mild%20stew.%20If%20you%20want%20stronger%20flavours,%20double%20the%20ginger,%20chillies%20and%20stew%20powder.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ESoak%20the%20rajma%20overnight%20(8%20hours)%20and%20pressure%20cook%20in%20enough%20water%20to%20cover%20it,%20till%20done%20with%20a%20pinch%20of%20heeng,%20methi%20and%20jeera%20(to%20help%20cut%20down%20the%20gassy%20effects%20of%20rajma).%3C/p%3E%3Cp%3EDrain%20the%20water%20and%20set%20aside%20the%20cooked%20rajma%20(unlike%20other%20dried%20lentils%20and%20beans,%20the%20water%20in%20which%20rajma%20is%20pressure%20cooked,%20is%20not%20used%20in%20cooking,%20discard%20it)%3C/p%3E%3Cp%3EIn%20a%20large%20pan,%20heat%20the%20oil.%3C/p%3E%3Cp%3ESeason%20with%20cinnamon,%20ginger,%20green%20chillies%20and%20curry%20leaves%20till%20the%20leaves%20crisp%20up%20a%20bit.%3C/p%3E%3Cp%3EAdd%20onion,%20fry%20till%20translucent.%3C/p%3E%3Cp%3EAdd%20ginger%20garlic%20paste%20and%20mix%20well%20for%20a%20minute.%3C/p%3E%3Cp%3EAdd%20the%20cooked%20and%20drained%20rajma%20and%20saute%20for%20a%20minute%20while%20stirring,%20so%20everything%20blends.%3C/p%3E%3Cp%3EAdd%20the%20coconut%20milk%20and%20thin%20it%20down%20with%20some%20water,%20stir%20well,%20cover%20and%20cook%20till%20it%20is%20bubbling.%3C/p%3E%3Cp%3EOnce%20the%20stew%20is%20bubbling,%20lower%20the%20heat%20to%20sim,%20add%20the%20stew%20powder%20and%20cook%20till%20rajma%20has%20reached%20your%20desired%20level%20of%20softness%20(about%2010%20minutes),%20stirring%20in%20between%20if%20necessary%20to%20prevent%20it%20from%20burning.%3C/p%3E%3Cp%3ENow%20add%20the%20carrots%20and%20boiled%20potatoes%20and%20simmer%20for%20another%205%20minutes.%3C/p%3E%3Cp%3EServe%20hot%20with%20dosas%20or%20appams%3C/p%3E%3Cp%3EYou%20can%20garnish%20this%20with%20fresh%20chopped%20coriander%20of%20crisp%20fried%20ginger%20juliennes%20(tempering).%3C/p%3E%3Cp%3EKim's%20Note:%3C/p%3E%3Cp%3EIf%20you%20prefer%20your%20carrots%20well%20cooked,%20add%20them%20at%20the%20same%20stage%20as%20the%20rajma.%20We%20prefer%20to%20have%20them%20raw%20to%20the%20bite.%3C/p%3E%3Cp%3EIf%20you%20want%20a%20stronger%20coconut%20flavour%20or%20a%20thicker%20stew,%20double%20the%20coconut%20milk%20and%20reduce%20the%20water.%3C/p%3E%3Cp%3EIf%20you%20want%20stronger%20flavours,%20double%20the%20ginger,%20chillies%20and%20stew%20powder.%3C/p%3E){kind=link}
