Ingredientes

  • 1 Tbsp. Vegetable oil
  • 1 c. Minced onion
  • 1/2 c. Coarsely minced celery
  • 1 x Garlic clove, chopped
  • 2 Tbsp. All-purpose flour
  • 1 1/2 c. Water
  • 1/4 c. Long-grain rice, uncooked
  • 1 tsp Chili pwdr
  • 1/2 tsp Grnd cumin
  • 1/4 tsp Salt
  • 14 1/2 ounce Canned whole tomatoes (no-salt-added), undrained minced
  • 10 1/2 ounce Low-sodium chicken broth
  • 3/4 lb Small fresh unpeeled shrimp
  • 15 1/2 ounce Canned red beans, liquid removed
  • 1 Tbsp. Lime juice

Direcciones

  1. Heat oil in a large Dutch oven over medium heat. Add in onion, celery, and garlic; saute/fry 5 min. Sprinkle with flour, stir well, and cook an additional minute, Add in 1 1/2 c. water and next 6 ingredients. Bring to a boil; cover, reduce heat, and simmer for 20 min.
  2. Peel and devein shrimp. Add in shrimp and red beans to rice mix, and stir well. Cook, uncovered, 5 min or possibly till shrimp is done. Remove from heat, and stir in lime juice.
  3. Yield: 7 1/2 c. (serving size: 1 1/2 c.).
