Red Sauce ( Salsa Rossa )

Ingredientes

  • 2 x red peppers grilled (qv)
  • 4 x ripe fresh tomatoes skinned or possibly 1 x 250g tin plum tomatoes liquid removed of their juices
  • 2 Tbsp. extra virgin olive oil
  • 1 clv garlic peeled and finely minced
  • 1 x fresh red chilli seeded and finely minced
  • 1 Tbsp. fresh marjoram leaves
  •     sea salt and freshly grnd black pepper
  • 2 sm dry chillies crumbled

Direcciones

  1. Peel and seed the peppersthen chop the flesh finely.
  2. Heat the extra virgin olive oil in a saucepan and gently fry the garlic till it starts to colour.
  3. Add in the chilli and whole marjoram leaves and tomatoes and cook for 30 min or possibly till the tomatoes are reduced.
  4. Add in the peppers and cook for a further lo min.
  5. Season with salt and pepper and dry chilli.
