%20for%20about%20the%20millionth%20time%20to%20a%20friend%20and%20she%20told%20me%20she%20made%20a%20chocolate%20wine%20cake%20a%20few%20days%20ago.%20%20%20I%20love%20my%20friends.%3C/p%3E%3Cp%3EAnd%20then%20it%20stuck%20with%20me.%20%20It%20was%20like%20tying%20a%20feather%20to%20a%20string%20and%20pulling%20it%20along%20in%20front%20of%20a%20cat,%20then%20tugging%20it%20away%20just%20as%20it%20pounces.%20%20The%20words%20'chocolate%20wine%20cake'%20floated%20in%20front%20of%20me%20like%20an%20unreachable%20feather%20toy%20while%20I%20agonized%20over%20whether%20a%20doctor%20could%20be%20held%20liable%20for%20his%20patient%20falling%20over%20a%20cliff%20and%20getting%20a%20leg%20chewed%20off%20by%20a%20shark%20(yes,%20really).%20%20I%20won't%20say%20my%20answer%20because%20it%20might%20be%20very%20wrong,%20but%20this%20cake%20is%20definitely%20very%20right.%3C/p%3E%3Cp%3EIt's%20unbelievably%20moist%20with%20a%20velvety%20crumb,%20but%20surprisingly%20not%20very%20rich.%20%20The%20wine%20is%20clearly%20present%20but%20not%20overwhelmingly%20so.%20%20This%20is%20from%20one%20of%20my%20absolute%20favorite%20blogs:%20Smitten%20Kitchen%20(from%20which%20I've%20also%20made%20this%20cake),%20who%20clearly%20has%20amazing%20cake%20recipes%20in%20addition%20to%20good%20taste%20and%20a%20a%20killer%20assonant%20blog%20name.%3C/p%3E%3Cp%3ESK%20says%20that%20for%20her,%20this%20is%20the%20real%20red%20velvet%20cake,%20and%20I%20agree.%20%20The%20cocoa%20powder%20gives%20the%20cake%20a%20natural%20red%20blush%20under%20the%20sun%20which%20is%20contrasted%20nicely%20with%20a%20dusting%20of%20icing%20sugar.%20%20Or%20you%20can%20choose%20to%20pair%20it%20with%20the%20mascarpone%20topping%20included%20in%20the%20original%20recipe,%20but%20I%20thought%20it%20was%20better%20plain%20(read:%20I%20was%20too%20lazy).%3C/p%3E%3Cp%3ESo%20if%20you've%20been%20having%20a%20hard%20time%20in%20life%20lately,%20try%20this%20cake.%20%20It%20won't%20fix%20your%20problems,%20but%20it'll%20help%20you%20forget%20them%20for%20a%20little%20while.%20%20Which%20is%20what%20cake%20is%20all%20about,%20right?%3C/p%3E%3Cp%3ERed%20Wine%20Chocolate%20Cake%3C/p%3E%3Cp%3EAdapted%20from%20Smitten%20Kitchen%3C/p%3E%3Cp%3ENote:%20I%20changed%20the%20sugar%20ratios%20slightly%20because%20I%20ran%20out%20of%20brown%20sugar%20midway%20through%20(such%20is%20the%20way%20of%20my%20organized%20life).%20%20I%20usually%20like%20to%20reduce%20sugar%20content%20in%20cakes,%20but%20I%20kept%20it%20roughly%20the%20same%20here%20-%20the%20acidity%20and%20bitterness%20of%20the%20wine%20means%20the%20cake%20really%20needs%20it,%20and%20the%20final%20product%20isn't%20very%20sweet%20at%20all.%20%20Try%20and%20use%20Dutch%20processed%20cocoa%20powder,%20because%20it%20really%20does%20make%20a%20difference.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20160C/325F.%20%20Butter%20and%20line%20a%209-inch%20round%20cake%20pan.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20cream%20butter%20and%20sugars%20until%20light%20and%20fluffy.%20%20Add%20the%20egg%20+%20egg%20yolk%20and%20beat%20till%20smooth,%20followed%20by%20wine%20and%20vanilla.%20%20If%20the%20batter%20looks%20curdled%20take%20a%20deep%20breath,%20make%20peace%20with%20your%20inner%20self%20and%20move%20on,%20it%20will%20be%20fine.%20%20Sift%20the%20flour,%20cocoa%20powder,%20baking%20soda,%20baking%20powder,%20salt%20and%20cinnamon%20straight%20into%20the%20creamed%20mixture%20and%20mix%20until%20just%20combined%20(as%20usual,%20don't%20over-mix!).%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20the%20prepared%20pan%20and%20smooth%20over%20with%20a%20spatula.%20%20Bake%20for%2025-30%20minutes%20or%20until%20a%20skewer%20comes%20out%20clean.%20%20Cool%20for%20about%2010%20minutes,%20take%20out%20of%20the%20pan%20and%20finish%20cooling%20on%20a%20rack.%20%20Dust%20with%20icing%20sugar%20and%20serve.%3C/p%3E){kind=link}
