Refrigerator Watermelon Rind Pickles

Ingredientes

  • 4 c. watermelon rind peeled and cubed
  • 1 c. sugar
  • 1 c. apple cider vinegar
  • 2 x 3 inch cinnamon stick
  • 1 tsp whole cloves

Direcciones

  1. Combine rind, sugar, vinegar, cinnamon and cloves in large saucepan. Stir to mix.
  2. Bring to a boil over high heat, stirring often. Reduce heat, cover and simmer gently till rind is tender and translucent/soft, about 45-60 min.
  3. Cold. Chill in glass container. Allow 12 hrs for flavors to blend.
  4. Will keep for 2 weeks.
