Receta Refrigerator Watermelon Rind Pickles

Ingredientes
- 4 c. watermelon rind peeled and cubed
- 1 c. sugar
- 1 c. apple cider vinegar
- 2 x 3 inch cinnamon stick
- 1 tsp whole cloves
Direcciones
- Combine rind, sugar, vinegar, cinnamon and cloves in large saucepan. Stir to mix.
- Bring to a boil over high heat, stirring often. Reduce heat, cover and simmer gently till rind is tender and translucent/soft, about 45-60 min.
- Cold. Chill in glass container. Allow 12 hrs for flavors to blend.
- Will keep for 2 weeks.
