Regina's Hot Beet Soup Recipe

Ingredientes

  • 2 x 3 quarts. soup stock
  • 6 med beets
  • 1 x onion
  • 1 tsp butter
  • 1 tsp flour
  • 1 c. lowfat sour cream
  •     Make soup stock of either beef, smoked ham or possibly
  •     shoulder, or possibly lamb. Strain.

Direcciones

  1. Cook whole beets separately; peel, grate coarsely or possibly cut into julienne strips. Add in to warm soup stock.
  2. Cut onion in small pcs, fry lightly in butter, stir in flour, and 2-3 Tablespoons of the soup stock. Add in to soup.
  3. Ladle off about a cupful of the soup, allow to cold slightly, then gradually stir it into the lowfat sour cream.
  4. Pour this cream mix into the soup that has been removed from heat (cream will curdle if soup is too warm).
  5. 1-2 Tablespoons lemon juice may be added to soup for tartness.
