Receta Regina's Hot Beet Soup Recipe

- Cook whole beets separately; peel, grate coarsely or possibly cut into julienne strips. Add in to warm soup stock.
- Cut onion in small pcs, fry lightly in butter, stir in flour, and 2-3 Tablespoons of the soup stock. Add in to soup.
- Ladle off about a cupful of the soup, allow to cold slightly, then gradually stir it into the lowfat sour cream.
- Pour this cream mix into the soup that has been removed from heat (cream will curdle if soup is too warm).
- 1-2 Tablespoons lemon juice may be added to soup for tartness.
