- 1/2 small onion, roughly chopped
- 1 gluten free beer
- 2 cups water
- Skillet:
- 1 tablespoon avocado oil (or preferred cooking oil)
- 1 red onion, diced
- 8 ounces sliced baby bellas (or preferred mushrooms)
- 2 tablespoons organic butter or ghee
- Final Ingredients:
- 1 gluten free beer
- 2-4 cloves of garlic, minced
- 28-ounce can of fire-roasted tomatoes, including juice
- 1/2 cup chopped flat-leaf parsley
- 3 pounds mussels, cleaned and debearded
