%20There%20are%20rubs%20for%20beef,%20pork,%20chicken,%20and%20fish,%20as%20well%20as%20something%20they%20call%20%22Pisa,%22%20which%20is%20a%20pretty%20damn%20delightful%20oregano-heavy%20Italian%20seasoning.%3C/p%3E%3Cp%3EYesterday,%20I%20found%20myself%20with%20three%20racks%20of%20ribs%20and%20no%20rub%20to%20season%20them%20with.%20Worse,%20I%20was%20short%20a%20few%20ingredients%20in%20the%20pantry,%20so%20I%20couldn't%20just%20make%20up%20a%20batch%20from%20scratch.%20Maryanne,%20Lynnafred,%20and%20I%20headed%20out%20to%20the%20supermarket%20to%20pick%20up%20what%20we%20needed,%20but%20those%20plans%20were%20immediately%20abandoned%20when%20we%20passed%20down%20the%20spice%20aisle%20and%20found%20a%20full%20selection%20of%20Pride%20of%20Szeged,%20including%20Rib%20Rub.%20The%20ingredients%20looked%20good%20and%20simple%20(Salt,%20Paprika,%20Garlic,%20Mustard,%20Sugar,%20Spices)%20and%20although%20I%20couldn't%20bust%20a%20tin%20open%20and%20give%20it%20a%20sniff,%20my%20lifelong%20reliance%20on%20Pride%20of%20Szeged%20as%20the%20House%20Paprika%20helped%20me%20decide%20to%20give%20it%20a%20try.%3C/p%3E%3Cp%3EI%20rubbed%20each%20rack%20of%20ribs%20generously%20with%20the%20spice%20blend%20and%20let%20it%20sit%20for%20about%20an%20hour%20as%20I%20got%20the%20smokehouse%20preheated%20and%20ready.%20When%20the%20box%20had%20heated%20up%20to%20about%20250%20F%20and%20the%20smoke%20generator%20was%20pumping%20out%20a%20good%20stream%20of%20hickory%20smoke,%20I%20put%20the%20ribs%20in%20for%20the%20long,%20slow%20cooking%20time%20that%20would%20turn%20them%20into%20tender%20delicacies.%20It%20took%20about%20three%20hours.%3C/p%3E%3Cp%3EI%20was%20very%20happy%20with%20the%20results.%20The%20Pride%20of%20Szeged%20Rib%20Rub%20is%20flavorful%20and%20enhances%20the%20pork%20without%20covering%20up%20the%20flavor%20-%20a%20nice%20mustard%20flavor,%20not%20too%20spicy%20despite%20the%20paprika,%20and%20not%20too%20sweet%20despite%20the%20sugar.%20At%20first%20taste,%20it%20does%20seem%20to%20be%20a%20bit%20heavy%20on%20the%20salt,%20but%20after%20an%20application%20of%20good%20barbecue%20sauce%20and%20some%20crisping%20time%20on%20a%20hot%20grill,%20the%20saltiness%20also%20blends%20into%20the%20overall%20flavor%20and%20comes%20into%20balance.%3C/p%3E%3Cp%3EIt's%20fairly%20economical%20as%20well.%20The%20five-ounce%20tin%20I%20bought%20was%20more%20than%20enough%20to%20liberally%20coat%20all%20three%20full%20racks%20of%20ribs%20with%20enough%20left%20over%20to%20do%20a%20couple%20more,%20for%20a%20little%20less%20than%20four%20dollars.%20I'm%20saving%20the%20rest%20to%20mix%20with%20some%20Bell's%20poultry%20seasoning%20and%20apply%20to%20a%20bone-in%20pork%20loin%20roast.%20I%20bet%20it%20will%20be%20awesome.%3C/p%3E){kind=link}
