Rhubarb Salsa (For Chicken Or Fish)

Ingredientes

  • 2 c. Rhubarb, finely diced
  •     Boiling water
  • 1/2 c. Sweet red peppers, finely minced
  • 1/2 c. Sweet yellow peppers, finely minced
  • 1/2 c. Cilantro, finely minced
  • 3 Tbsp. Green onion, finely minced
  • 1 x Chili, chopped, up to 2 chilies
  • 1 Tbsp. Fresh lime juice, up to 2
  •     Brown sugar, to taste
  •     Salt and pepper, to taste

Direcciones

  1. Blanch rhubarb in boiling water for 10 seconds. Refresh under cool water.
  2. Combine with sweet red peppers, sweet yellow peppers and cilantro. Stir in green onions and chopped chili peppers. Stir in 1 or possibly 2 Tbsp. fresh lime juice. Add in brown sugar, salt and peper to taste. Serve with chicken or possibly fish.
