%20for%20a%20few%20minutes%20per%20side%20and%20then%20brushing%20with%20a%20balsamic%20glaze,%20most%20likely%20using%20some%20store-bought%20balsamic%20cream%20(Pastene)%20that%20I%20have%20on%20hand,%20dressed%20up%20with%20a%20bit%20of%20%20lemon%20juice%20and%20olive%20oil.%3C/p%3E%3Cp%3EAs%20to%20the%20broccoli%20%E2%80%93%20Steve%20and%20I%20like%20it%20well-steamed%20rather%20than%20the%20%E2%80%9Chealthier%E2%80%9D%20more%20crisp%20style.%20%20Actually,%20there%20are%20arguments%20for%20both%20sides:%20the%20more%20cooked,%20the%20more%20accessible%20many%20of%20the%20nutrients,%20albeit%20more%20cooking%20will%20reduce%20the%20amount%20of%20the%20heat-sensitive%20Vitamin%20C,%20%20for%20example.%20But,%20in%20any%20case,%20here%20is%20a%20great%20way%20to%20keep%20broccoli%20crisp%20in%20your%20fridge,%20as%20well%20as%20perk%20up%20broccoli%20that%20was%20not%20quite%20as%20firm%20as%20one%20would%20like%20when%20purchased.%3C/p%3E%3Cp%3EJust%20pop%20the%20broccoli%20in%20water%20and%20then%20pop%20into%20the%20fridge.%3C/p%3E%3Cp%3EANYWAY%20%E2%80%93%20since%20the%20rest%20of%20the%20meal%20is%20quite%20simple,%20I%20thought%20I%20would%20make%20the%20rice%20more%20interesting.%20%20And,%20truthfully,%20it%20does%20not%20take%20that%20much%20effort.%20Here%20is%20what%20I%20did:%3C/p%3E%3Cp%3EStart%20with%20sauteing%20in%20olive%20oil%20to%20build%20a%20flavor%20base.%3C/p%3E%3Cp%3EI%20started%20with%20sauteing%20a%20half%20a%20small%20onion%20until%20soft,%20and%20then%20added%20diced%20carrot,%20chopped%20fresh%20parsley,%20and%20freshly%20ground%20black%20pepper.%20I%20also%20tossed%20in%20a%20few%20dried%20red%20pepper%20flakes%20for%20fun.%3C/p%3E%3Cp%3EAdd%20rice%20and%20saute%20some%20more!%3C/p%3E%3Cp%3ENext,%20I%20added%20the%20rice%20(I%20used%201%20cup)%20and%20sauteed%20until%20just%20a%20bit%20toasty%20%E2%80%93%20a%20few%20minutes%20while%20stirring.%3C/p%3E%3Cp%3EI%20then%20added%202%20cups%20liquid.%20I%20recommend%20using%20chicken%20broth%20or%20bouillon%20or%20other%20savory-flavored%20liquid,%20if%20available.%20%20I%20make%20chicken%20stock%20and%20keep%20it%20in%20one-cup%20containers%20in%20the%20freezer.%20%20Today%20I%20defrosted%20a%20cup%20of%20chicken%20stock%20and%20added%20water%20to%20make%20two%20cups%20liquid%20to%20the%20one%20cup%20of%20rice.%3C/p%3E%3Cp%3EAdd%20water%20and%20simmer%20on%20low%20for%2045%20minutes%20or%20more%20as%20needed.%3C/p%3E%3Cp%3EI%20am%20blessed%20to%20have%20a%20stovetop%20with%20a%20%E2%80%9Csimmer%E2%80%9D%20%20burner,%20so%20keeping%20the%20rice%20on%20a%20low%20simmer%20is%20easy%20for%20me.%20%20When%20I%20have%20to%20use%20another%20burner,%20I%20watch%20the%20rice%20carefully%20and/or%20use%20a%20heat%20diffuser.%20%20But,%20even%20at%20a%20more%20active%20simmer,%20rice%20comes%20out%20nicely%20after%20about%2045%20minutes.%20Just%20keep%20an%20eye%20out%20so%20it%20doesn%E2%80%99t%20dry%20out%20too%20much.%20%20Although,%20if%20you%20get%20a%20bit%20of%20burning%20on%20the%20bottom,%20it%20can%20add%20to%20the%20complexity%20of%20the%20flavor%20and%20texture%20once%20you%20stir%20the%20rice%20up%20and%20serve.%3C/p%3E%3Cp%3EAll%20done%20%E2%80%93%20and%20%20it%20has%20passed%20the%20%E2%80%9Cquality%20control%E2%80%9D%20tasting.%20Yum!%3C/p%3E%3Cp%3EAnd,%20there%20you%20have%20it.%20%20For%20a%20one-pot%20meal,%20you%20can%20add%20shredded%20meat,%20tofu,%20tempeh,%20fish%E2%80%A6%20ooo,%20salmon%20would%20be%20good!%E2%80%A6or%20whatever%20strikes%20your%20fancy.%20%20BUT,%20do%20remember%20that%20you%20can%20always%20make%20rice%20more%20interesting%20with%20just%20a%20little%20effort.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
