.%3C/p%3E%3Cp%3EThe%20book%20I%20chose%20for%20my%20Random%20Recipe%20was%20The%20River%20Cottage%20Year%20by%20Hugh%20Fearnley-Whittingstall.%20%20I%20picked%20this%20up%20%20recently%20for%20%C2%A32.99%20in%20a%20discount%20book%20shop.%20%20The%20randomness%20of%20my%20recipe%20choice%20is%20relative%20since%20I%20decided%20to%20go%20with%20the%20chapter%20for%20February,%20on%20the%20basis%20that%20the%20recipe%20was%20likely%20to%20be%20suitable%20for%20this%20chilly%20time%20of%20year,%20but%20I%20promise%20that%20I%20did%20choose%20the%20recipe%20in%20the%20February%20chapter%20quite%20randomly,%20just%20by%20identifying%20the%20beginning%20and%20end%20of%20the%20February%20chapter%20and%20then%20opening%20the%20book%20randomly%20to%20find...%3C/p%3E%3Cp%3ERice%20Pudding%20with%20Butterscotch%20Apples%3C/p%3E%3Cp%3EServes%206%3C/p%3E%3Cp%3Ecoated%20with%20butter%20(it%20shouldn't%20fry%20or%20even%20sizzle).%3C/p%3E%3Cp%3EMix%20the%20milk%20and%20cream%20together%20and%20add%20to%20the%20saucepan.%20Stir%20in%20the%20sugar%20until%20dissolved.%3C/p%3E%3Cp%3ETransfer%3C/p%3E%3Cp%3Eto%20the%20ovenproof%20dish,%20grate%20a%20little%20nutmeg%20over%20the%20surface%20(if%3C/p%3E%3Cp%3Eusing)%20and%20cook%20for%203-3%C2%BD%20hours.%20Every%2030%20minutes,%20stir%20gently%20from%3C/p%3E%3Cp%3Ebottom%20to%20top%20to%20separate%20the%20grains%20and%20work%20the%20surface%20skin%20back%20into%3C/p%3E%3Cp%3Ethe%20pudding,%20until%20the%20rice%20has%20expanded%20to%20fill%20the%20dish%20and%20is%20quite%3C/p%3E%3Cp%3Etender%20(2%C2%BD-3%20hours%20should%20do%20it).%20For%20the%20last%2030%20minutes,%20leave%20to%20cook%3C/p%3E%3Cp%3Ewithout%20stirring%20so%20a%20golden-brown%20skin%20forms,%20turning%20the%20oven%20up%20to%3C/p%3E%3Cp%3E170C/gas%20mark%203%20for%20the%20last%2010%20minutes.%3C/p%3E%3Cp%3EPeel%20and%20core%20the%20apples%3C/p%3E%3Cp%3Eand%20cut%20them%20into%201-2cm%20dice.%20Melt%20the%20butter%20in%20a%20large%20frying%20pan%20and%3C/p%3E%3Cp%3Efry%20the%20apples%20very%20gently.%20After%202%20minutes,%20sprinkle%20with%20the%20sugar%3C/p%3E%3Cp%3Ethen%20gently%20toss%20and%20fry%20for%2012-15%20minutes,%20until%20tender%20and%20glazed.%3C/p%3E%3Cp%3EServe%20immediately%20with%20a%20%20generous%20dollop%20of%20the%20hot%20rice%20pudding.%3C/p%3E%3Cp%3EI'm%20sure%20my%20regular%20readers%20will%20not%20be%20surprised%20to%20learn%20that%20I%20made%20a%20few%20changes!%20%20I%20buttered%20the%20dish,%20put%20all%20the%20rice%20pudding%20ingredients%20into%20the%20dish%20including%20the%20knob%20of%20butter%20%20and%20baked%20the%20pudding%20in%20the%20oven%20for%20the%20required%20time.%20%20I%20also%20used%20a%20little%20more%20milk%20and%20a%20bit%20less%20cream.%3C/p%3E%3Cp%3EThis%20was%20undoubtedly%20a%20treat,%20the%20butterscotch%20apples%20were%20gorgeous%20and%20a%20perfect%20foil%20to%20the%20rich%20creamy%20rice.%3C/p%3E%3Cp%3EI%20am%20also%20entering%20this%20recipe%20for%20Tea%20Time%20Treats%20as%20the%20theme%20for%20Feburary%20is%20'pudding'%20and%20it's%20being%20hosted%20this%20month%20by%20Kate%20at%20What%20Kate%20Baked%20as%20I%20think%20Karen%20at%20Lavender%20&%20Lovage%20is%20lying%20down%20in%20a%20darkened%20room%20to%20recover%20from%20the%20massive%20round%20up%20of%20Tea%20Time%20Treats%20from%20January!%3C/p%3E){kind=link}
