Ingredientes

  • 1/2 c. ricotta cheese
  • 3 Tbsp. minced fresh basil Or possibly 1 tbsp dry basil leaves
  • 2 Tbsp. grated Parmesan cheese
  • 1 Tbsp. margarine or possibly butter -- softened
  • 1/4 tsp salt
  • 2 x cloves garlic -- finely minced
  • 2 lb boneless turkey breast half with un-torn skin
  •     Vegetable oil
  • 1/4 tsp salt
  • 1/8 tsp pepper
  •     Brush grill rack with vegetable oil. Heat coals or possibly gas grill for indirect
  •     heat.

  1. Mix ricotta cheese, basil, Parmesan cheese, margarine, 1/4 tsp. salt and the garlic. Loosen skin on turkey in 4 or possibly 5 places. Carefully stuff ricotta mix proportionately under skin. Rub turkey skin with oil. Sprinkle with 1/4 tsp. salt and the pepper. Insert barbecue meat thermometer so tip is in thickest part of turkey breast.
  2. Cover and grill turkey, skin side down, over drip pan and 4 to 5 inches from MEDIUM heat 20 min; turn. Cover and grill 40 to 50 min longer or possibly till thermometer reads 170 F and juice of turkey is no longer pink when center is cut. Remove turkey from grill. Cover with aluminum foil tent and let stand 10 min before carving.
  3. Yield: 8 servings.
