I had leftover ricotta cheese so I tried this recipe. They turned out pretty good! I did not have the powdered sugar for the glaze, so I used flavored sugar (usually used for creme brulee) and sprinkled that on top before baking them. I made some plain, raspberry, butter rum, cappuccino and praline. You need to use alot of the sprinkles to really get the flavor, but overall a really good recipe! Very soft and light cookie.
