%20as%20well%20as%20dried%20Morel%20Mushrooms%20(and%20lots%20of%20other%20mushroomy%20stuffs%20and%20spices%20and%20oils%20and%20a%20whole%20lot%20of%20fun%20food%20stuff)%20directly%20from%20MarxFood.com.%20Anyways....when%20I%20browsed%20through%20my%20%22starred%22%20recipes%20in%20my%20reader...I%20knew%20the%20second%20I%20saw%20this....that%20it%20was%20exactly%20what%20I%20was%20looking%20for.%3C/p%3E%3Cp%3ECiaChowLinda%20made%20hers%20with%20ricotta%20cheese...ProudItalianCook%20made%20hers%20with%20goat%20cheese.%20I%20had%20ricotta%20on%20hand%20and%20went%20with%20that.%20I%20also%20added%20some%20sliced%20green%20onions%20and%20of%20course%20the%20morels.%20Fried%20morels%20that%20is.%20And%20the%20crust?%20You%20can%20use%20pie%20dough%20from%20the%20refrigerator%20section%20of%20the%20grocery%20store.%20I%20didn't%20have%20any%20so%20I%20made%20mine%20from%20a%20recipe%20out%20of%20my%20ancient%20(use%20to%20be%20my%20mother%20in-law's)%20Betty%20Crocker%20Cookbook.%20It%20started%20out%20as%20a%20plain%20pastry%20dough%20until.....%3C/p%3E%3Cp%3EI%20added%20....%3C/p%3E%3Cp%3Ewait%20for%20it.....%3C/p%3E%3Cp%3Ewait%20for%20it.........%3C/p%3E%3Cp%3Egrated%20parmesan%20cheese!!!%3C/p%3E%3Cp%3EOh%20man...was%20that%20good!%20It%20just%20added%20a%20yummy%20savory%20flavor%20to%20the%20crust.%3C/p%3E%3Cp%3ESavory%20Parmesan%20Tart%20/%20Pie%20Crust%3C/p%3E%3Cp%3E(for%208%22%20or%209%22%20double%20crust%20pie....I%20only%20needed%20one%20crust%20so%20the%20other%20half%20is%20in%20my%20fridge.%20How%20long%20is%20it%20good%20in%20there%20for,%20I%20wonder)%3C/p%3E%3Cp%3E1%201/2%20cups%20sifted%20all%20purpose%20flour%3C/p%3E%3Cp%3E1/2%20teaspoon%20salt%3C/p%3E%3Cp%3E1/2%20cup'ish%20grated%20parmesan%20cheese%3C/p%3E%3Cp%3E1/2%20cup%20cold%20butter%20(or%20shortening...I%20used%20butter)%3C/p%3E%3Cp%3E4-5%20tablespoons%20cold%20water%3C/p%3E%3Cp%3ESift%20together%20the%20flour%20and%20the%20salt.%20Cut%20in%20the%20butter%20with%20a%20pastry%20blender%20(or%20use%20a%20fork%20like%20I%20did%20cuz%20my%20pastry%20blenders%20always%20get%20screwed%20up%20in%20the%20drawer....all%20bent%20and%20stuff.%20Pisses%20me%20off)%20until%20you%20get%20pieces%20that%20are%20pea%20sized.%20Or....(and%20this%20is%20what%20I%20did)....Cut%20in%20half%20of%20the%20butter%20until%20the%20mixture%20looks%20like%20corn%20meal.%20Then%20cut%20in%20the%20rest%20of%20the%20butter%20until%20you%20have%20those%20pea%20sized%20pieces.%20This%20is%20suppose%20to%20make%20the%20pastry%20extra%20tender%20and%20flaky.%3C/p%3E%3Cp%3EToss%20in%20the%20parmesan%20cheese%20and%20mix%20quickly,%20but%20don't%20try%20and%20%22blend%22%20it%20in...you%20don't%20want%20to%20mess%20with%20the%20piece%20sized%20pieces.%3C/p%3E%3Cp%3ESprinkle%20water,%20a%20tablespoon%20at%20a%20time,%20over%20part%20of%20the%20mixture.%20Gently%20mix%20with%20a%20fork;%20push%20to%20the%20side%20of%20the%20bowl.%20Sprinkle%20next%20tablespoon%20of%20water%20over%20dry%20part,%20mixing%20lightly,%20push%20to%20moistened%20part%20at%20the%20side.%20Repeat%20till%20all%20is%20moistened.%20Gather%20up%20the%20with%20your%20fingers%20and%20form%20a%20ball.%20Let%20stand%20several%20minutes.%3C/p%3E%3Cp%3EDivide%20dough%20in%20half%20and%20form%20each%20half%20into%20a%20ball.%20Flatten%20slightly%20and%20roll%20on%20a%20lightly%20floured%20surface%20to%20the%20desired%20size%20and%20thickness.%20For%20a%20tart,%20roll%20the%20dough%20thinner%20than%20you%20would%20for%20a%20pie.%3C/p%3E%3Cp%3EFit%20into%20your%20tart%20pan,%20trimming%20edges.%20Poke%20a%20few%20holes%20in%20the%20bottom%20with%20a%20fork.%20Bake%20in%20a%20450'%20oven%20for%20about%208%20minutes.%3C/p%3E%3Cp%3EAnd%20now%20for%20the%20fantabulous%20filling!!%3C/p%3E%3Cp%3ERicotta%20Cheese%20Tart%20with%20Morel%20Mushrooms%3C/p%3E%3Cp%3ELet%20me%20mention%20a%20revelation%20I%20had.%20About%20Herbs%20de%20Provence.%20Prior%20to%20this%20recipe,%20I%20had%20never%20seen%20nor%20(knowingly)%20tasted%20Herbs%20de%20Provence.%20I%20usually%20just%20substitute%20it%20out%20for%20other%20stuff.%20I%20decided%20to%20look%20up%20what%20herbs%20are%20in%20this%20mix,%20figuring%20I'd%20just%20make%20my%20own%20blend.%20I%20mean,%20I%20have%20a%20cupboard%20FULL%20of%20herbs%20and%20spices.%20Surely%20I'd%20have%20everything%20needed.%3C/p%3E%3Cp%3EUntil%20I%20read%20that%20lavender%20is%20one%20of%20the%20herbs.%3C/p%3E%3Cp%3EThats%20when%20I%20knew%20I%20needed%20to%20splurge%20and%20buy%20this%20mix.%20You%20see,%20I've%20never%20cooked%20with%20lavender%20either.%3C/p%3E%3Cp%3EWhen%20I%20open%20the%20jar...and%20took%20a%20wiff.%20Ooooooh%20myyyyyyyyy%20GOSH!%20I%20mean%20WOW!%20I%20fell%20in%20love.%20The%20aroma%20IS.%20TO.%20DIE%20FOR!%20If%20you%20have%20a%20chance%20to%20buy%20Herbs%20de%20Provence,%20do%20it...if%20I%20recipe%20calls%20for%20Herbs%20de%20Provence....I%20highly%20recommend%20that%20you%20use%20it!%3C/p%3E%3Cp%3EI%20%20mean...seriously....look%20at%20that%20lovely%20pile%20of
