%20nurtured%20her%20little%20body%20&%20soul,%20and%20she%20grew%20up%20to%20be%20a%20vegetarian.%3C/p%3E%3Cp%3EIn%20a%20land%202500%20miles%20away%20in%20the%20heartland%20of%20America,%20a%20little%20boy%20grew%20up%20in%20the%20wholesome%20state%20of%20Ohio.%20There,%20the%20people%20were%20jolly%20and%20warm,%20and%20the%20meals%20big%20and%20hearty.%20Juicy%20steaks%20&%20creamy%20potatoes%20gave%20the%20boy%20strong%20bones%20&%20muscles,%20and%20he%20grew%20up%20to%20be%20an%20%E2%80%9Cequal%20opportunity%20eater%E2%80%9D,%20more%20commonly%20known%20as%20an%20omnivore.%3C/p%3E%3Cp%3ETwo%20decades%20later,%20the%20playful%20hands%20of%20fate%20brought%20this%20little%20girl%20and%20boy%20together%20in%20the%20concrete%20jungle%20of%20New%20York%20City.%20As%20different%20as%20they%20were%20in%20their%20diets,%20they%20shared%20a%20common%20love%20for%20food%20(and%20each%20other),%20so%20they%20often%20had%20to%20get%20creative%20with%20their%20flexitarian%20menus%20and%20two-pot%20meals.%20Until%20one%20day,%20a%20Fairy%20Chefmother,%20Giada%20DeLaurentiis,%20waved%20her%20magic%20spatula%20and%20showed%20them%20a%20recipe%20that%20was%20vegetarian%20but%20tasted%20like%20meat.%20The%20little%20girl%20and%20boy%20devoured%20the%20dish%20completely,%20and%20lived%20happily%20until%20the%20next%20meal.%3C/p%3E%3Cp%3EThis%20is%20my%20variation%20on%20Giada%E2%80%99s%20Rigatoni%20with%20Vegetarian%20Bolognese.%20I%20opted%20to%20make%20my%20tomato%20base%20from%20scratch,%20substituted%20seasonal%20spring%20ramps%20for%20onions,%20and%20picked%20my%20favorite%20herbs%20%E2%80%93%20thyme,%20basil%20&%20tarragon.%20What%20I%20kept%20constant%20(and%20believe%20it%E2%80%99s%20critical%20to)%20is%20the%20mascarpone%20and%20the%20mushrooms,%20which%20give%20it%20the%20%20%E2%80%9Cmeaty%E2%80%9D%20taste%20that%20serves%20to%20trick%20all%20carnivores!%3C/p%3E%3Cp%3EWhat%20You%E2%80%99ll%20Need:%3C/p%3E%3Cp%3EIn%20a%20skillet,%20heat%20up%20some%20olive%20oil.%20Transfer%20the%20finely%20chopped%20into%20the%20skillet,%20season%20with%20salt%20&%20pepper%20&%20herbs,%20and%20cook%20for%205-7%20minutes,%20until%20vegetables%20are%20cooked.%3C/p%3E%3Cp%3EAdd%20broth%20and%20bring%20the%20vegetables%20to%20a%20boil.%20Then%20simmer%20until%20the%20liquid%20is%20reduced%20by%20half%20(takes%20about%2010%20min)%3C/p%3E%3Cp%3EFold%20in%20mascarpone%20cheese%20until%20well-integrated%3C/p%3E%3Cp%3EMeanwhile,%20bring%20a%20large%20pot%20of%20salted%20water%20to%20a%20boil.%20Add%20the%20rigatoni%20and%20cook%20until%20tender%20but%20al%20dente%20(3-5%20min%20for%20fresh,%208-10%20for%20dry)%3C/p%3E%3Cp%3EDrain%20the%20pasta%20and%20transfer%20to%20the%20vegetable%20bolognese%20sauce.%20Mix%20well,%20adding%20some%20pasta%20liquid%20if%20mixture%20is%20dry.%3C/p%3E%3Cp%3ESprinkle%20with%20parmesan%20and%20take%20a%20huge%20satisfying%20bite%20into%20it!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
