- 1 Tbsp olive oil

- 120ml (1/2 cup) dry white wine
- 8 sprigs thyme
- Risotto
- 40g (3 Tbsp) butter
- 30 ml (2 Tbsp) olive oil
- 1 large clove garlic, crushed
- 1 1/2 cups arborio or carnaroli rice
- 120ml (1/2 cup) dry white wine
- 1 litre (4 cups) vegetable stock
- To finish
- 150g pecorino or other semi-hard cheese, grated
- freshly ground black pepper
- extra thyme for garnish
