Ingredientes

  • The onions can be made ahead

  • 2 – 3 medium-large yellow onions (about 450g / 1lb)
  • 1 Tbsp olive oil
  • pinch of salt
  • freshly ground black pepper black pepper
  • 120ml (1/2 cup) dry white wine
  • 8 sprigs thyme
  • Risotto
  • 40g (3 Tbsp) butter
  • 30 ml (2 Tbsp) olive oil
  • 1 large clove garlic, crushed
  • 1 1/2 cups arborio or carnaroli rice
  • 120ml (1/2 cup) dry white wine
  • 1 litre (4 cups) vegetable stock
  • To finish
  • 150g pecorino or other semi-hard cheese, grated
  • freshly ground black pepper
  • extra thyme for garnish
