%20but%20if%20you%20can%20only%20find%20a%20bone-in%20leg%20don%E2%80%99t%20fret.%20It%E2%80%99s%20configured%20the%20same%20as%20a%20bone-in%20ham.%20If%20you%E2%80%99ve%20ever%20carved%20a%20bone-in%20ham,%20a%20leg%20of%20lamb%20should%20be%20a%20breeze.%20I%20prefer%20a%20bone-in%20roast,%20I%20think%20cooking%20on%20the%20bone%20helps%20preserve%20some%20of%20the%20juiciness%20of%20the%20meat%20plus%20if%20I%20plan%20to%20make%20an%20Irish%20beef%20stew%20with%20the%20leftover%20meat%20the%20bone%20is%20nice%20to%20add%20to%20the%20stock.%3C/p%3E%3Cp%3ENext%20to%20a%20reasonable%20amount%20of%20marinating%20or%20seasoning,%20the%20best%20way%20to%20control%20the%20%E2%80%9Clamby%E2%80%9D%20aroma%20is%20to%20trim%20much%20of%20the%20fat%20off%20the%20roast,%20leaving%20the%20thinnest%20layer%20possible.%20Much%20of%20the%20aroma%20we%20associate%20with%20lamb%20comes%20from%20the%20lanolin%20in%20the%20lamb%20fat%20and%20removing%20most%20of%20it%20will%20cut%20down%20on%20some%20of%20the%20lambiness.%3C/p%3E%3Cp%3EOnce%20trimmed%20your%20lamb%20is%20ready%20for%20seasoning.%20Some%20people%20like%20an%20overnight%20soaking%20in%20a%20marinade%20based%20on%20wine%20with%20added%20herbs.%20I%20prefer%20an%20overnight%20semi-dry%20mixture.%20Both%20will%20result%20in%20a%20nicely%20seasoned%20roast.%20I%E2%80%99m%20not%20a%20fan%20of%20sticking%20numerous%20spikes%20of%20strong%20herbs%20such%20as%20rosemary%20deeply%20into%20the%20flesh%20and%20I%20also%20don%E2%80%99t%20care%20for%20cutting%20slits%20all%20over%20the%20roast%20to%20slide%20in%20raw%20garlic%20cloves.%20The%20holes%20make%20it%20easy%20for%20the%20juices%20to%20escape%20when%20roasting%20and%20the%20meat%20often%20has%20little%20areas%20of%20meat%20that%20are%20just%20too%20powerfully%20over%20seasoned.%20Any%20combination%20of%20herbs,%20spices,%20mustard,%20beer,%20wine%20or%20fruit%20juice%20(pomegranate%20works%20well)%20will%20season%20lamb%20nicely.%20My%20favorite%20seasoning%20combination%20and%20roasting%20method%20follows%3C/p%3E%3Cp%3E1%20leg%20of%20lamb%20trimmed%20of%20most%20of%20the%20fat.%3C/p%3E%3Cp%3EPlace%20lamb%20in%20a%20large%20zip%20lock%20bag%20or%20a%20dish%20with%20sides%20large%20enough%20to%20hold%20the%20roast.%20Combine%20all%20of%20the%20seasonings%20in%20a%20bowl%20to%20form%20a%20loose%20paste.%20Pour%20the%20mixture%20over%20the%20meat%20to%20coat%20well,%20cover%20and%20refrigerate%20overnight.%3C/p%3E%3Cp%3ERemove%20the%20roast%20from%20the%20refrigerator%20about%20an%20hour%20before%20roasting.%20Remove%20the%20meat%20from%20the%20seasoning%20mixture%20gently%20scraping%20of%20the%20solid%20pieces%20of%20herbs%20that%20might%20burn%20and%20become%20bitter%20when%20roasting.%20Re-season%20the%20meat%20with%20additional%20salt%20&%20pepper.%20If%20using%20sprigs%20of%20fresh%20herbs%20place%20them%20on%20the%20bottom%20of%20the%20roasting%20pan%20along%20with%20a%20half%20dozen%20whole%20large%20garlic%20cloves.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%C2%B0F.%20Roast%2015%20minutes.%20Reduce%20oven%20temperature%20to%20325%C2%B0F;%20roast%20about%2020%20minutes%20per%20pound%20for%20medium%20or%20until%20internal%20temperature%20reaches%20145%C2%B0F%20when%20tested%20with%20meat%20thermometer%20inserted%20into%20thickest%20part%20of%20roast.%3C/p%3E%3Cp%3ETransfer%20roast%20to%20cutting%20board;%20cover%20with%20foil.%20Let%20stand%2010%20to%2015%20minutes%20before%20carving.%20Internal%20temperature%20will%20continue%20to%20rise%205%C2%B0%20to%2010%C2%B0F%20during%20stand%20time.%3C/p%3E%3Cp%3EI%20recommend%20serving%20whole%20small%20parsley%20potatoes,%20caramelized%20fried%20apple%20rings,%20asparagus%20and%20English%20style%20parsley%20sauce%20with%20roast%20lamb.%3C/p%3E){kind=link}
