Roasted Calf's Liver With Wild Mushroom Sauce

Ingredientes

  • 3 Tbsp. Sweet paprika, preferably Hungarian
  • 1 1/2 Tbsp. Extra virgin olive oil - (to 2 tbspns)
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 3 lb Calf's liver
  • 1 1/4 c. Veal stock or possibly chicken stock
  •     Wild Mushroom Sauce see * Note

Direcciones

  1. Preheat the oven to 550 degrees.
  2. In a bowl combine the paprika and sufficient extra virgin olive oil to create a paste. Add in salt and pepper. Rub the paste over the liver and place it in a roasting pan, smooth side up. Place in oven for 10 min. Add in just sufficient stock to the pan to create a thin layer of liquid. Continue roasting for another 10 min, or possibly till a meat thermometer reads 120 degrees at the thickest part.
  3. Transfer to a cutting board and let rest 5 min.
  4. To serve, thinly slice liver and serve with the sauce.
  5. This recipe yields 6 to 8 servings.
