%20....only%20to%20discover%20it%20was%20BLANK!!!%20It%20had%20a%20title...but%20nothing%20inside%20(hmm...sounds%20like%20a%20few%20government%20officials...just%20a%20title).%3C/p%3E%3Cp%3EOk,%20so%20I%20didn't%20work%20all%20that%20hard%20on%20the%20post.%20It%20didn't%20take%20me%20hours....but%20still%3C/p%3E%3Cp%3EIt%20was%20frustrating.%20I'm%20the%20type%20of%20person%20who%20types%20as%20I%20think...it%20just%20comes%20out%20as%20I%20go.%20And%20there%20was%20no%20recreating.%3C/p%3E%3Cp%3EAnd%20here%20I%20am...the%20following%20night...re-presenting%20a%20wonderful%20recipe%20that%20has%20great%20flavor....works%20just%20as%20good%20as%20leftover.%3C/p%3E%3Cp%3EThe%20recipe%20is%20flexible....I%20always%20change%20up%20the%20veggies,%20based%20on%20my%20mood%20and%20what's%20available%20at%20the%20time.%20I'm%20going%20to%20list%20the%20recipe%20as%20it%20was%20presented%20by%20Cooking%20Light....and%20then%20I%20will%20strikeout%20what%20I%20didn't%20do,%20this%20time,%20and%20type%20in%20red%20what%20I%20added.%3C/p%3E%3Cp%3EDeal?%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20425'%20F%3C/p%3E%3Cp%3EPlace%20all%20your%20veggies%20on%20a%20jelly-roll%20pan%20that%20has%20been%20coated%20with%20cooking%20spray.%20Drizzle%20some%20of%20the%20olive%20oil%20over%20the%20veggies%20and%20sprinkle%20with%201%20tablespoon%20of%20rosemary,%201%20teaspoon%20basil%20and%20salt%20and%20pepper.%20Gently%20toss%20it%20all%20together%20so%20that%20its%20evenly%20coated.%20Arrange%20the%20veggies%20so%20they're%20in%20a%20single%20layer%20and%20bake%20for%20about%2030%20minutes.%3C/p%3E%3Cp%3EIf%20you%20like%20your%20veggies%20%22el%20dente%22....then%20remove%20them%20from%20the%20pan%20and%20set%20aside...keeping%20them%20warm.%20If%20you're%20like%20me...and%20enjoy%20them%20a%20bit%20softer...even%20tender%20and%20super%20roasted...then%20leave%20them%20on%20the%20pan...pushing%20them%20aside%20to%20make%20room%20for%20the%20thighs.%3C/p%3E%3Cp%3ESprinkle%20the%20chicken%20with%20the%20remaining%20seasonings%20and%20garlic%20slices%3C/p%3E%3Cp%3Eand%20place%20them%20on%20the%20pan%20and%20arrange%20the%20veggies%20where%20ever%20they'll%20fit%3C/p%3E%3Cp%3EBake%20for%20about%2035%20minutes%20or%20until%20the%20chicken%20is%20done......and%20enjoy.%3C/p%3E%3Cp%3EYou%20wanna%20know%20something%20else?%20I'm%20a%20butter%20hound.%20I%20love%20butter...especially%20on%20my%20veggies.%20But%20with%20this%20dish....not%20a%20speck%20of%20butter%20was%20found%20on%20my%20plate.%3C/p%3E%3Cp%3ENow%20thats%20an%20accomplishment!%3C/p%3E){kind=link}
