Roasted Fresh Tomatoes

Ingredientes

  • 6 large ripe tomatoes (about 3 lbs.), room temperature
  • 2 TBSP oil
  • 1/2 tsp crushed basil leaves
  • 1/4 tsp thyme leaves
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Direcciones

  1. Preheat oven to 425F
  2. Core tomatoes; cut in half horizontally.
  3. Gently squeeze halves to remove seeds.
  4. Place tomato halves, cut side up, on rack in broiler pan.
  5. Combine oil, basil, thyme, salt and pepper in a small bowl; mix well.
  6. Brush oil mixture over cut sides of tomatoes.
  7. Turn tomatoes cut side down.
  8. Bake until well browned, about 30 minutes.
  9. Remove skins if desired.
