%3C/p%3E%3Cp%3EBut%20at%20last%20the%20potato%20famine%20has%20ended%20and%20some%20fresh%20young%20thangs%20are%20finally%20showing%20up%20on%20the%20shelves.%20Roasting%20is%20one%20of%20my%20favorite%20ways%20to%20prepare%20potatoes%20-%20it's%20easy%20and%20delicious%20and%20I%20love%20the%20way%20they%20get%20crisp%20on%20the%20outside%20and%20soft%20on%20the%20inside.%3C/p%3E%3Cp%3ERoasting%20is%20also%20a%20nice%20way%20to%20showcase%20some%20fresh%20herbs.%20And%20rosemary%20makes%20the%20perfect%20star.%20I%20got%20hooked%20on%20the%20stuff%20when%20we%20lived%20in%20Berkeley%20as%20our%20house%20had%20these%20enormous%20rosemary%20bushes%20growing%20in%20front%20of%20it%20and%20all%20along%20the%20sides.%20My%20but%20they%20were%20lovely!%20And%20so%20prolific,%20too.%20I%20would%20pick%20the%20stuff%20by%20the%20branchful,%20hanging%20them%20up%20and%20drying%20them%20to%20give%20to%20friends%20who%20were%20not%20as%20lucky%20as%20we%20in%20the%20edible%20plantings%20department.%20In%20a%20moment%20of%20Martha%20Stewart-like%20madness,%20I%20even%20drew%20one%20of%20the%20sprigs%20(see%20at%20right)%20and%20incorporated%20it%20in%20a%20label%20that%20I%20pasted%20on%20the%20packages%20of%20fragrant%20needles.%20Ah,%20the%20things%20I%20used%20to%20have%20time%20for%20before%20my%20son%20was%20born...%3C/p%3E%3Cp%3ENow%20that%20we're%20back%20on%20the%20east%20coast,%20our%20rosemary%20production%20is%20on%20a%20bit%20smaller%20scale%20since%20it's%20got%20to%20fit%20into%20a%20flowerpot%20(albeit%20a%20pretty%20big%20one)%20in%20order%20to%20allow%20us%20to%20move%20it%20indoors%20during%20the%20winters.%20But%20our%20plant%20seems%20to%20be%20thriving,%20despite%20the%20long,%20dark%20winter%20it%20spent%20inside%20craning%20its%20finely%20needled%20branches%20towards%20the%20dim%20light%20at%20the%20window.%20I%20moved%20it%20outside%20about%20a%20month%20ago%20to%20let%20it%20soak%20up%20some%20sun.%3C/p%3E%3Cp%3EI%20scrubbed%20the%20potatoes,%20minced%20some%20garlic,%20picked%20some%20of%20the%20deliciously-scented%20green%20rosemary%20needles,%20gave%20them%20a%20wash,%20chopped%20them%20coarsely,%20and%20tossed%20them%20with%20the%20potatoes,%20a%20big%20glug%20of%20olive%20oil,%20a%20few%20grinds%20of%20black%20pepper%20and%20a%20big%20pinch%20of%20salt.%20Then%20turned%20them%20out%20into%20my%20favorite%20roasting%20dish%20and%20popped%20them%20into%20the%20hot%20oven.%3C/p%3E%3Cp%3EI%20recommend%20using%20a%20coarser-grained%20salt%20that%20will%20stand%20on%20its%20own%20better%20than%20fine-grained%20salts%20can.It's%20nice%20to%20have%20that%20little%20bit%20of%20salty%20crunch%20along%20with%20the%20rosemary's%20strong%20aromatic%20flavor.%3C/p%3E%3Cp%3EThese%20potatoes%20are%20very%20good%20on%20their%20own%20as%20well%20as%20with%20meat,%20fish%20or%20salad.%3C/p%3E%3Cp%3ERoasted%20New%20Potatoes%20With%20Fresh%20Rosemary%20&%20Sea%20Salt%3C/p%3E%3Cp%3EServes%204-6%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E*%201%20lb%20small%20new%20potatoes,%20scrubbed%20of%20all%20dirt%20and%20with%20any%20blemishes%20cut%20out.%20If%20the%20potatoes%20are%20different%20sizes,%20cut%20them%20into%20equal-sized%20pieces%20as%20you%20want%20them%20to%20roast%20at%20the%20same%20rate%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20400%20degrees.%20Toss%20the%20potatoes,%20herbs,%20oil,%20garlic,%20salt%20and%20a%20few%20grinds%20of%20black%20pepper%20thoroughly.%20You%20want%20each%20potato%20to%20be%20coated%20in%20oil.%3C/p%3E%3Cp%3E2.%20Spread%20them%20in%20a%20single%20jumbled%20layer%20on%20a%20thick-bottomed%20cookie%20sheet%20or%20in%20a%20glass%20or%20ceramic%20baking%20dish%20and%20roast%20for%2035-45%20minutes%20(this%20will%20depend%20on%20how%20large%20your%20'taters%20are).%20Do%20not%20forget%20to%20check%20them%20after%2015-20%20minutes%20and%20turn%20them%20all%20to%20prevent%20burning.%20If%20your%20oven%20heats%20unevenly%20(as%20mine%20does)%20you%20may%20want%20to%20check%20and%20turn%20them%20earlier%20twice%20while%20they're%20roasting%20instead%20of%20just%20once.%3C/p%3E%3Cp%3E3.%20Once%20tender,%20remove%20from%20the%20oven%20and%20allow%20to%20cool%20slightly%20before%20serving.%3C/p%3E%3Cp%3EMore%20recipes%20you%20might%20like:%3C/p%3E%3Cp%3EI'm%20entering%20this%20recipe%20in%20this%20week's%20Weekend%20Herb%20Blogging%20event,%20hosted%20by%20Winnie%20from%20Healthy%20Green%20Kitchen.%3C/p%3E){kind=link}
