%20around%20a%20campfire.%20What%20we%20won%E2%80%99t%20have%20are%20computers.%3C/p%3E%3Cp%3EI%20have%20so%20much%20I%20need%20to%20get%20done%20that%20I%20admit%20it%E2%80%99s%20giving%20me%20hives%20to%20leave%20my%20laptop%20at%20home.%20I%20know%20some%20folks%20say%20(or,%20apparently%20without%20noticing%20the%20irony,%20make%20inspirational%20YouTube%20videos%20illustrating)%20that%20technology%20robs%20us%20of%20peace.%20And%20that%E2%80%99s%20sometimes%20true.%20But%20in%20a%20lot%20of%20ways,%20technology%20has%20helped%20me%20make%20space%20for%20peace.%20The%20apps%20in%20the%20slideshow%20above%20are%20one%20example%20(Insight%20Timer%20and%20Calm%20are%20my%20favorites).%20But%20technology%20also%20connects%20me%20to%20other%20people.%20I%E2%80%99ll%20miss%20my%20computer%20and%20I%20don%E2%80%99t%20feel%20guilty%20about%20that.%3C/p%3E%3Cp%3EStill,%20I%E2%80%99m%20excited%20to%20not%20be%20able%20to%20do%20work.%20I%E2%80%99m%20excited%20for%20a%20hard%20paddle.%20I%E2%80%99m%20excited%20for%20the%20beautiful%20water.%20I%E2%80%99m%20excited%20for%20the%20kids%E2%80%99%20excitement.%20I%E2%80%99m%20excited%20for%20lobster%20rolls.%20I%E2%80%99m%20excited%20to%20see%20the%20stars!%3C/p%3E%3Cp%3EI%20leave%20you%20with%20this%20sweet%20little%20skillet%20cake%20to%20hold%20you%20over%20while%20I%E2%80%99m%20gone:%20a%20tender%20yellow%20cake%20overstuffed%20with%20tender,%20sweet%20roasted%20peaches.%20Make%20sure%20the%20peaches%20you%20choose%20are%20very%20ripe%20to%20get%20the%20full,%20heavy%20end-of-summer%20effect!%20And%20come%20follow%20me%20on%20Instagram%20for%20photos%20of%20Maine!%20(what,%20you%20didn%E2%80%99t%20think%20I%20was%20going%20to%20leave%20my%20phone%20behind,%20did%20you?!)%3C/p%3E%3Cp%3EOne%20year%20ago:%20Easy%20Carrot%20Cake%20with%20Whipped%20Icing%3C/p%3E%3Cp%3ETwo%20years%20ago:%20Gooey%20Carmelitas%3C/p%3E%3Cp%3E1/2%20cup%20butter%201/2%20cup%20water%201%201/8%20cups%20cake%20flour%201%20cup%20white%20sugar%201/2%20teaspoon%20baking%20soda%201/2%20teaspoon%20salt%201%20egg,%20lightly%20beaten%201/4%20cup%20sour%20cream%201/4%20teaspoon%20almond%20extract%201/4%20teaspoon%20vanilla%20extract%208%20peaches,%20peeled%20and%20quartered%20(I%20use%20this%20method%20on%20very%20ripe%20peaches)%206%20tablespoons%20butter,%20melted%206%20tablespoons%20sugar%201/2%20teaspoon%20cinnamon%20vanilla%20bean%20ice%20cream,%20for%20serving%3C/p%3E%3Cp%3ETo%20make%20the%20cake:%20Preheat%20the%20oven%20to%20375%20degrees%20and%20prepare%20a%2010-inch%20oven-safe%20skillet%20sprayed%20with%20cooking%20spray.%20In%20a%20medium%20saucepan%20over%20medium%20heat,%20bring%20the%20butter%20and%20water%20to%20a%20boil.%20In%20the%20meantime,%20in%20a%20separate%20large%20bowl,%20whisk%20together%20the%20cake%20flour,%20sugar,%20baking%20soda,%20and%20salt%20before%20whisking%20in%20the%20egg,%20sour%20cream,%20almond%20extract,%20vanilla%20extract.%20Mix%20to%20combine.%20While%20mixing,%20slowly%20pour%20in%20the%20boiling%20butter%20and%20water%20mixture.%20Mix%20to%20combine%20completely.%20Your%20batter%20will%20be%20very%20runny.%20Pour%20the%20batter%20into%20the%20prepared%20baking%20pan.%20Bake%20at%20375%20degrees%20for%2017-22%20minutes%20or%20until%20a%20toothpick%20inserted%20in%20several%20places%20comes%20out%20with%20a%20few%20moist%20crumbs.%20Roast%20your%20peaches:%20Preheat%20the%20oven%20to%20350%20degrees%20F.%20Line%20a%20baking%20sheet%20with%20foil%20sprayed%20with%20cooking%20spray.%20Arrange%20the%20peach%20quarters%20in%20a%20single%20layer%20(I%20separated%20mine%20so%20they%20weren't%20touching)%20on%20both%20baking%20sheets.%20Brush%20them%20well%20with%20the%20melted%20butter.%20Mix%20the%20cinnamon%20and%20sugar%20together.%20Sprinkle%20all%20of%20the%20sugar/cinnamon%20mixture%20over%20the%20peaches.%20Roast%20the%20peach%20quarters%20for%20about%2015%20minutes%20or%20until%20a%20fork%20slides%20easily%20through.%20Top%20cake%20with%20roasted%20peaches%20and%20serve%20immediately%20with%20vanilla%20bean%20ice%20cream.%20%203.2.2925%3C/p%3E){kind=link}
