%20and%20gorgonzola%20(delicious%20year-round!)%20salad%20I%20didn't%20look%20any%20further.%3C/p%3E%3Cp%3EA%20look%20in%20the%20cupboard%20and%20the%20shops%20took%20me%20a%20little%20off%20recipe.%20I%20added%20a%20whole%20head%20of%20cauliflower%20to%20the%20recipe%20for%20some%20extra%20golden-edged%20substance.%20Most%20of%20the%20pears%20in%20our%20neighbourhood%20were%20rock-hard%20and%20not%20ready%20for%20dinner,%20but%20Michael%20found%20a%20few%20nashi%20pears%20at%20Pachamama%20that%20were%20worth%20a%20shot.%20The%20white%20wine%20(not%20white%20balsamic)%20vinegar%20and%20black%20lentils%20in%20the%20pantry%20would%20surely%20do%20the%20job.%20Sage%20leaves%20were%20plentiful%20but%20didn't%20fry%20to%20a%20crisp%20as%20they%20were%20supposed%20to.%3C/p%3E%3Cp%3EThe%20ingredient%20proportions%20didn't%20quite%20add%20up%20(too,%20too%20many%20lentils%20and%20not%20quite%20enough%20dressing)%20but%20it%20was%20easy%20to%20portion%20out%20our%20own%20plates%20and%20make%20plans%20for%20the%20leftovers%20later.%20The%20salad%20was%20everything%20I%20had%20anticipated%20-%20layers%20of%20savoury,%20earthy%20green%20and%20brown%20with%20episodes%20of%20pungency%20and%20sweetness.%3C/p%3E%3Cp%3ERoasted%20pear%20&%20gorgonzola%20salad%3C/p%3E%3Cp%3E(adapted%20from%20a%20recipe%20in%20Hetty%20McKinnon's%20Community)%3C/p%3E%3Cp%3EPreheat%20an%20oven%20to%20200%C2%B0C.%3C/p%3E%3Cp%3EPlace%20the%20lentils%20in%20a%20saucepan%20and%20cover%20them%20with%20water.%20Bring%20them%20to%20the%20boil,%20then%20simmer%20them%20until%20tender%20(this%20can%20take%2015-40%20minutes%20depending%20on%20the%20type).%3C/p%3E%3Cp%3EChop%20the%20cauliflower%20into%20bite-sized%20florets%20and%20place%20them%20in%20a%20baking%20tray.%20Drizzle%20over%202%20tablespoons%20of%20olive%20oil,%20sprinkle%20over%20salt%20and%20pepper.%20Bake%20the%20cauliflower%20until%20tender,%20and%20golden%20around%20the%20edges,%20about%2025%20minutes.%3C/p%3E%3Cp%3EWhile%20the%20cauliflower%20is%20baking,%20slice%20the%20pear%20into%204-8%20pieces%20each%20and%20remove%20the%20cores.%20Place%20the%20pear%20wedges%20in%20a%20baking%20tray.%20Drizzle%20over%202%20tablespoons%20olive%20oil,%20the%20vinegar%20and%20sugar.%20Bake%20the%20pears%20until%20cooked%20through%20but%20still%20holding%20their%20shape,%20about%2020%20minutes.%3C/p%3E%3Cp%3EMelt%20the%20butter%20in%20a%20frying%20pan%20until%20it's%20frothing%20and%20add%20the%20sage%20leaves.%20Fry%20the%20leaves%20until%20they're%20crispy,%20then%20turn%20off%20the%20heat.%3C/p%3E%3Cp%3ENow%20it's%20time%20to%20assemble%20everything!%20Layer%20up%20the%20rocket,%20cauliflower%20and%20pears%20(including%20the%20pears'%20roasting%20juices).%20Drain%20the%20lentils%20and%20spoon%20them%20over%20the%20top.%20Crumble%20over%20the%20gorgonzola%20and%20sprinkle%20on%20the%20sage%20leaves%20(and%20any%20still-melted%20butter%20in%20the%20pan).%3C/p%3E){kind=link}
