Roasted Poblano Potato Soup

Ingredientes

  • 6 x Poblano chiles
  • 8 med Russet potatoes, peeled, boiled (retain water) and mashed
  • 1/2 stk butter
  • 1 x 8 ounce. package of cream cheese
  • 1 quart Lowfat milk
  • 1/4 c. Fresh lemon juice
  • 1/2 tsp White pepper
  • 1/2 tsp Garlic pwdr
  •     Salt to taste
  • 2 tsp Summer savory
  • 1 tsp Paprika

Direcciones

  2. Roast the chiles over an open flame till they are black all over. Wrap them in a wet towel and set them aside for 20 min. Peel and seed the chiles and coarsly chop them.
  3. In a large pot place the chiles and the remainder of the ingredients
  4. (except for the savory and the paprika). With a hand held blender puree everything till the mix is smooth. Add in the water which the potatoes were boiled in to achieve a nice, slightly thick consistency.
  5. Add in salt to taste
  6. Garnish with the summer savory and the paprika.
  7. Serves 6
