%20paired%20with%20a%20round%20grilled%20cheese%20sandwich.%3C/p%3E%3Cp%3EWe%20had%20what%20was%20called%20a%20Toas-tite.%20You'd%20lay%20a%20piece%20of%20bread%20on%20one%20side%20of%20this%20contraption,%20place%20a%20couple%20slices%20of%20cheese%20on%20the%20bread,%20top%20it%20with%20another%20slice%20of%20bread%20then%20seal.%20Place%20it%20on%20the%20burner%20and%20toast%20on%20both%20sides.%20The%20end%20result%20was%20an%20incredible%20grilled%20cheese%20sandwich%20where%20the%20center%20would%20swell%20up%20making%20a%20nice%20hot%20gooey%20cavity%20of%20cheese.%3C/p%3E%3Cp%3EWhen%20I%20moved%20out%20of%20my%20parents%20home%20I%20confiscated%20the%20Toas-tie.%20%20I%20wanted%20to%20be%20certain%20no%20one%20else%20in%20my%20family%20would%20take%20it.%20%20This%20was%20mine!%20%20%20%20You%20can%20read%20more%20about%20the%20Toas-tite%20here.%3C/p%3E%3Cp%3EThis%20past%20week%20it%20was%20raining%20and%20cold.%20My%20body%20was%20screaming%20for%20a%20pot%20of%20Tomato%20soup%20and%20a%20round%20grilled%20cheese.%20So%20I%20decided%20to%20make%20some%20for%20dinner.%20Tomato%20Basil%20sounded%20great%20but%20wasn't%20up%20for%20anything%20too%20creamy%20or%20fattening.%20Checking%20out%20various%20recipes%20online%20Ina%20Gartens%20Roasted%20Tomato%20Basil%20Soup%20appeared%20in%20more%20recipes%20than%20you%20could%20imagine%20with%20rave%20reviews.%20So%20I%20decided%20I'd%20try%20hers.%20I%20did%20make%20a%20few%20minor%20changes%20to%20her%20recipe%20and%20although%20I%20wanted%20to%20strictly%20use%20fresh%20tomatoes,%20her%20recipe%20called%20for%20both%20fresh%20and%20canned.%20Why%20not%20test%20out%20the%20recipe%20that%20received%20great%20reviews%20and%20then%20change%20it%20up%20next%20time,%20if%20I%20felt%20like%20it.%3C/p%3E%3Cp%3EThe%20Roasted%20Tomato%20Basil%20Soup%20was%20fantastic.%20You%20would%20have%20thought%20there%20was%20cream%20in%20it.%20This%20recipe%20is%20a%20keeper%20and%20one%20that%20if%20you%20haven't%20made%20before%20but%20love%20Tomato%20Soup,%20you%20have%20to%20try.%3C/p%3E%3Cp%3EHere's%20the%20recipe%20with%20the%20changes%20I%20made%20in%20blue.%3C/p%3E%3Cp%3ERoasted%20Tomato%20Basil%20Soup%3C/p%3E%3Cp%3Eserves%206-8%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20degrees%20F.%20Toss%20together%20the%20tomatoes,%201/4%20cup%20olive%20oil,%20salt,%20and%20pepper.%3C/p%3E%3Cp%3ESpread%20the%20tomatoes%20in%201%20layer%20on%20a%20baking%20sheet%20and%20roast%20for%2045%20minutes%20along%20with%20a%20head%20of%20garlic%20that's%20been%20wrapped%20in%20heavy%20duty%20foil%20and%20drizzled%20with%20EVOO).%20When%20tomatos%20and%20garlic%20are%20done,%20set%20aside%20to%20cool.%20Then%20peel%20the%20skins%20off%20the%20tomatoes,%20discarding%20the%20skins.%3C/p%3E%3Cp%3EIn%20an%208-quart%20stockpot%20over%20medium%20heat,%20saute%20the%20onions%20and%20garlic%20with%202%20tablespoons%20of%20olive%20oil,%20the%20butter,%20and%20red%20pepper%20flakes%20for%2010%20minutes,%20until%20the%20onions%20start%20to%20brown.%20Add%20the%20canned%20tomatoes,%20basil,%20thyme,%20and%20chicken%20stock.%20Add%20the%20oven-roasted%20tomatoes,%20including%20the%20liquid%20on%20the%20baking%20sheet,%20along%20with%20squeezing%20out%206%20cloves%20of%20roasted%20garlic%20into%20the%20pot.%3C/p%3E%3Cp%3EBring%20to%20a%20boil%20and%20simmer%20uncovered%20for%2040%20minutes.%3C/p%3E%3Cp%3EPass%20through%20a%20food%20mill%20fitted%20with%20the%20coarsest%20blade.%20Using%20an%20immersion%20blender%20or%20upright%20blender%20puree%20to%20your%20desired%20consistency.%20Add%20Balsamic%20Vinegar.%20Taste%20for%20seasonings.%20Serve%20hot%20or%20cold.%3C/p%3E%3Cp%3ENote:%20You%20don't%20have%20to%20roast%20the%20garlic.%20I%20chose%20to%20because%20roasted%20gives%20the%20garlic%20a%20sweeter,%20milder%20flavor%20than%20raw%20garlic%20which%20I%20prefer.%20The%20leftover%20roasted%20garlic%20can%20then%20be%20squeezed%20out%20onto%20crostini%20or%20a%20cracker%20for%20a%20delicious%20snack!%3C/p%3E%3Cp%3EAfter%20pureeing%20and%20doing%20a%20tase%20test%20I%20felt%20something%20was%20missing.%20%20I%20added%20a%20teaspoon%20of%20balsamic%20vinegar%20and%20for%20me%20it%20was%20just%20right.%3C/p%3E%3Cp%3EEnjoy!!%3C/p%3E){kind=link}
