Roasted Tomatoes with Goat Cheese

Makes a wonderful appetizer for this holiday season or anytime.

Ingredientes

  • 10 plum tomatoes [small]
  • 4 cloves garlic, minced
  • 3 Tbsp olive oil
  • 1 1/2 Tsp salt
  • fresh ground pepper
  • 1 small bunch basil
  • 20 slices sourdough bread, toasted
  • 2/3 cup fresh goats cheese [about 3oz]

Direcciones

  1. Slice tomatoes in half lengthwise, keeping seeds and pulp intact.In a large bowl combine tomatoes,garlic.oil salt and pepper. Toss to coat well.
  2. Place tomatoes on a baking pan cut side up. Distribute basil over tomatoes, saving some for a garnish.
  3. Bake in a 275 degree preheated oven until tomatoes start to brown on top and are soft but still moist. About 1 hour, remove from oven and turn on broiler.
  4. Using a fork mash 1 tomato half on each slice of bread and top with a generous Tsp of goat cheese. Broil until cheese begins to melt.
  5. Sprinkle with thinly sliced basil and serve.
