.%20Plus%20one%20of%20the%20great%20things%20about%20this%20recipe%20is%20it's%20versatility;%20you%20can%20use%20any%20vegetables%20you%20like.%20I%20settled%20on%20summer%20squash,%20red%20onion,%20asparagus,%20and%20sun%20dried%20tomatoes.%3C/p%3E%3Cp%3EBetween%20the%20chopping%20and%20roasting%20and%20boiling%20I%20was%20trying%20to%20stay%20as%20cool%20as%20possible,%20which%20meant%20dragging%20my%20large%20fan%20from%20the%20living%20room%20to%20the%20kitchen%20whenever%20I%20had%20to%20be%20in%20there.%3C/p%3E%3Cp%3EWish%20I%20could%20say%20these%20were%20from%20the%20farmers'%20market%20but%20it%20was%20too%20hot%20for%20that.The%20more%20garlic%20the%20better%20is%20my%20motto.If%20you%20can't%20get%20fresh%20then%20Trader%20Joe's%20frozen%20asparagus%20is%20really%20decent.%3C/p%3E%3Cp%3EThe%20luscious%20smells%20emanating%20from%20the%20kitchen%20were%20what%20got%20me%20to%20push%20over%20and%20over%20through%20the%20wet%20wall%20of%20heat%20that%20seemed%20to%20block%20the%20entrance%20to%20my%20kitchen.%20At%20least%20I%20didn't%20have%20to%20go%20in%20all%20that%20often.%20For%20a%20recipe%20that%20has%20such%20a%20nice%20complex%20flavor,%20it's%20remarkably%20easy%20to%20make.%20As%20soon%20as%20the%20vegetables%20were%20roasting%20in%20the%20oven%20I%20started%20boiling%20the%20chicken%20stock%20for%20the%20orzo;%20then%20added%20the%20orzo%20to%20the%20stock%20when%20I%20went%20back%20to%20stir%20the%20vegetables.%3C/p%3E%3Cp%3EReconstituted%20sun%20dried%20tomatoes%20are%20so%20much%20easier%20to%20chop.%3C/p%3E%3Cp%3EFor%20me%20it's%20the%20extras%20to%20the%20recipe%20that%20make%20it%20so%20fantastic.%20I%20used%20three%20different%20oils%20on%20the%20vegetables:%20a%20regular%20Spanish%20olive%20oil,%20roasted%20garlic%20olive%20oil,%20white%20truffle%20oil.%20Also,%20instead%20of%20adding%20mushrooms%20to%20the%20vegetable%20mix%20(the%20original%20recipe%20I%20found%20called%20for%20portabellos),%20I%20used%20wild%20porcini%20mushroom%20sea%20salt.%20In%20fact%20that's%20what%20inspired%20the%20entire%20recipe.%20I've%20had%20this%20salt%20for%20a%20while%20and%20could%20never%20quite%20figure%20out%20what%20to%20do%20with%20it;%20but%20it%20adds%20a%20fantastic%20smokey%20flavor%20to%20this%20recipe.My%20secret%20weapons!I%20also%20threw%20some%20chopped%20garlic%20in%20with%20the%20chicken%20stock%20:)And%20a%20little%20more%20porcini%20salt%20before%20mixing!Sunflower%20seeds-so%20much%20cheaper%20than%20pine%20nuts.%3C/p%3E%3Cp%3ESo%20my%20recipe%20isn't%20exactly%20exact...it's%20kind%20of%20a%20to%20your%20taste%20type%20of%20thing:%3C/p%3E%3Cp%3Earound%20a%20little,%20then%20roast%20for%20another%2012-15.%3C/p%3E%3Cp%3EFor%20the%3C/p%3E%3Cp%3Eorzo%20I%20used%20chicken%20stock.%20Not%20really%20necessary,%20water%20would%20do,%20but%20I%3C/p%3E%3Cp%3Efeel%20that%20the%20stock%20adds%20a%20bit%20of%20richness.%20I%20also%20put%20some%20chopped%3C/p%3E%3Cp%3Egarlic%20in%20the%20stock%20because%20I%20just%20really%20like%20garlic.%20Bring%20stock%20to%3C/p%3E%3Cp%3Eboil%20and%20cook%20pasta.%20If%20you've%20never%20used%20orzo%20before%20be%20mindful%20that%20it%3C/p%3E%3Cp%3Eplumps%20up%20a%20good%20deal%20so%20it's%20okay%20to%20use%20a%20little%20more%20stock%20than%20you%3C/p%3E%3Cp%3Emight%20think%20you%20need.%20I%20let%20it%20summer%20until%20most%20of%20the%20liquid%20is%20gone%3C/p%3E%3Cp%3Eso%20that%20I%20don't%20have%20to%20strain%20it.%3C/p%3E%3Cp%3EOnce%20the%20orzo%20and%20the%20vegetables%20are%20done,%20combine%20in%20a%20large%20bowl%20and%20add%20a%20little%20more%20spice%20to%20taste.%3C/p%3E%3Cp%3EThe%20first%20time%20I%20made%20this%20I%20also%20roasted%20pine%20nuts...but%20then%20when%20I%3C/p%3E%3Cp%3Elooked%20for%20them%20for%20this%20round%20and%20saw%20how%20expensive%20they%20are%20(holy%3C/p%3E%3Cp%3Ecow!)%20I%20substitute%20dry%20roasted%20sun%20flower%20seeds%20which%20worked%20just%20as%3C/p%3E%3Cp%3Ewell.%20Top%20it%20all%20off%20with%20some%20grated%20hard%20Italian%20cheese%20(I%20used%20romano%3C/p%3E%3Cp%3Ebut%20a%20pecorino%20or%20parmesan%20would%20work%20just%20as%20well),%20and%20voila!%3C/p%3E%3Cp%3EIsn't%20everything%20better%20with%20cheese?%3C/p%3E%3Cp%3EBecause%20it%20was%20so%20very%20hot%20I%20skipped%20the%20usual%20cup%20of%20coffee%20or%20wine%20I%20drink%20while%20cooking%20and%20instead%20made%20some%20Guarapincoco.%20One%20of%20my%20girl%20friends%20and%20I%20discovered%20Guarapincoco%20while%20having%20brunch%20at%20Cuba%20Libre%20in%20Chinatown.%20You%20should%20definitely%20go%20to%20Cuba%20Libre;%20the%20unlimited%20brunch%20deal%20was%20fantastic.%20The%20food%20and%20service%20were%20wonderful,%20portions%20quite%20generous,%20atmosphere%20is%20fun...I%20kind%20of%20thought%20I%20might%20die%20when%20we%20left%20though%20because%20we%20had%20to%20try%20everything.%20The%20Guarapincoco,%20which%20you'll%20find%20under%20the%20Aqua%20Frescas%20on%20the%20menu,%20was%20one%20of%20the%20best%20things%20we%20had%20though%20so%20I%20knew%20I%20was%20going%20to%20have%20to%20recreate%20it%20at%20home.%3C/p%3E%3Cp%3EMy%20recipe%20for%20this%20is%20also%20not%20exact.%20Despite%20some%20Internet%20searching%20we%20couldn't%20find%20a%20recipe%20so%20I%20just%20started%20mixing%20and%20stopped%20when%20it%20tasted%20good!%3C/p%3E%3Cp%3EGuarapincoco%20recipe:%3C/p%3E%3Cp%3EPineapple%20juice%3C/p%3E%3Cp%3ESugar%20cane%20juice%3C/p%3E%3Cp%3ECoconut%20milk%3C/p%3E%3Cp%3ELime%20juice%3C/p%3E%3Cp%3EI%20used%20the%20entire%20can%20of%20sugar%20cane%20juice%20and%20about%203/4%20of%20a%20can%20of%20pineapple%20juice.%20I'm%20sure%20you%20could%20use%20the%20entire%20pineapple%20juice;%20I%20just%20used%20what%20I%20had%20on%20hand.%20Coconut%20milk%20you%20don't%20need%20much%20of,%20maybe%201/3%20to%201/2%20the%20can.%20What%20you're%20looking%20for%20is%20for%20it%20to%20make%20the%20drink%20slightly%20creamy%20and%20to%20give%20it%20a%20pale,%20milky%20yellow%20color.%20The%20lime%20juice%20I%20added%20last.%20If%20you%20stop%20before%20the%20lime%20juice%20then%20you%20basically%20have%20a%20super%20sweet%20pina%20colada.%20The%20lime%20juice%20really%20tempered%20the%20pina%20coladay%20flavor.%3C/p%3E%3Cp%3EThis%20is%20totally%20my%20new%20summer%20drink.%3C/p%3E%3Cp%3EThinking%20the%20addition%20of%20a%20little%20mango%20rum%20would%20take%20this%20to%20a%20whole%20new%20level.%3C/p%3E){kind=link}
