%20households,%20one%20of%20which%20was%20%20Sir%20Anthony%20Browne,%20Viscount%20Montague,%20England%E2%80%99s%20Ambassador%20to%20Rome%20and%20a%20Knight%20of%20The%20Garter.%20His%20country%20estate%20was%20Cowdray%20House,%20west%20Sussex.%3C/p%3E%3Cp%3EDuring%20the%20period%20of%20the%20English%20Civil%20War%20May%20began%20work%20on%20his%20book,%20The%20Accomplisht%20Cook,%20though%20it%20was%20not%20published%20until%20the%20year%20of%20Charles%20II's%20restoration%20(1660),%20by%20which%20time%20Robert%20May%20was%20already%2072%20years%20of%20age.%20His%20cookbook%20was%20an%20extraordinary%20thing%20at%20the%20time%20as%20chefs%20jealously%20guarded%20their%20secrets%20and%20this%20was%20the%20first%20substantial%20recipe%20book%20to%20be%20published%20in%20England.%20Over%20the%20following%20years%20Robert%20May%20updated%20the%20book,%20with%20the%201665%20edition%20(about%20the%20fifth)%20being%20the%20final%20one%20that%20he%20edited%20himself.%20Robert%20May%20died%20in%20his%2080s%20in%201664/1665.%3C/p%3E%3Cp%3EDeana,%20from%20Long%20Past%20Remembered,%20has%20several%20posts%20on%20Robert%20May%20and%20his%20recipes.%20And%20if%20you%20know%20Deana,%20you%20know%20she's%20the%20dedicated%20authority%20on%20all%20chefs%20and%20recipes%20past.%20She'll%20have%20much%20more%20detailed%20information%20on%20Robert%20May.%20Be%20sure%20to%20check%20out%20at%20least%20one%20of%20her%20posts%20HERE.%3C/p%3E%3Cp%3EMay's%20poached%20salmon%20dish%20is%20quite%20perfect,%20the%20orange%20a%20marvelous%20foil%20for%20the%20salmon%20and%20it's%20made%20with%20only%20two%20ingredients,%20which%20you%20probably%20have%20in%20your%20pantry%20already.%20The%20only%20pesky%20thing%20is%20peeling%20and%20slicing%20the%20oranges.%20:)%20So%20as%20a%20shortcut,%20if%20you're%20cooking%20for%20one%20or%20two,%20just%20use%20the%20wine%20and%20orange%20juice%20and%20save%20the%20orange%20slices%20as%20a%20presentation%20feature%20when%20you%20have%20company.%20You'll%20notice%20very%20few%20measurements%20here%20as%20The%20Two%20Fat%20Ladies%20were%20annoyingly%20vague%20in%20that%20department,%20although%20I%20do%20think%20they%20put%20out%20a%20cookbook%20at%20the%20time.%20You'll%20have%20to%20do%20some%20guessing,%20depending%20on%20how%20much%20salmon%20you%20use.%20This%20particular%20recipe%20serves%20two.%3C/p%3E%3Cp%3EBTW:%20Not%20the%20first%20time%20I've%20posted%20something%20from%20The%20Two%20Fat%20Ladies%20series%20(see%20Spatchcocked%20Game%20Hens)%20and%20we%20love%20both%20recipes.%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPeel%20the%20oranges%20and%20slice.%20Place%20a%20layer%20in%20a%20skillet%20or%20pan%20and%20lay%20the%20salmon%20on%20top.%20Lay%20more%20orange%20slices%20around%20the%20the%20salmon%20and%20then%20add%20salt,%20pepper%20and%20nutmeg%20to%20the%20very%20top%20of%20the%20salmon.%20Finish%20by%20topping%20with%20remaining%20orange%20slices.%20Pour%20orange%20juice%20over%20the%20top%20and%20then%20red%20wine.%3C/p%3E%3Cp%3EPlace%20skillet%20on%20the%20stove,%20cover,%20and%20poach%20for%20about%2010%20or%2015%20minutes.%20Watch%20carefully.%20Much%20depends%20on%20the%20size%20of%20your%20salmon.%20Nothing%20is%20worse%20than%20overcooked%20fish!%3C/p%3E){kind=link}
