%20I%20can%20see%20water,%20and%20when%20I%20open%20the%20window%20the%20scent%20of%20flowers%20fills%20the%20rooms.%3C/p%3E%3Cp%3EView%20from%20my%20window%20when%20I%20first%20got%20here,%20early%20Spring%3C/p%3E%3Cp%3EWalking%20Mia%20on%20a%20misty%20morning%3C/p%3E%3Cp%3EThe%20show%20opens%20tonight,%20and%20aside%20from%20feeling%20extremely%20fulfilled%20from%20working%20with%20this%20character%20and%20this%20incredible%20cast%20%E2%80%93%20who%20have%20been%20so%20warm%20with%20welcoming%20me%20into%20their%20lives%20%E2%80%93%20I%E2%80%99m%20also%20pleased%20to%20be%20selling%20some%20cookies%20for%20the%20Hamptons%20crowd%20at%20the%20concessions.%20%20While%20I%20couldn%E2%80%99t%20quite%20put%20a%20gluten-free,%20allergy-friendly%20cookie%20out%20there%20(both%20to%20limit%20costs%20and%20appeal%20to%20the%20appetite%20of%20this%20particular%20audience)%20I%20knew%20my%20contribution%20had%20to%20be%20something%20other%20than%20the%20basic%20chocolate%20chip%20cookie%20(which%20will%20still%20be%20there%20from%20their%20original%20source).%3C/p%3E%3Cp%3Ewith%20Jessica%20Forsythe,%20Rosemary%20Klein%20and%20Diana%20Marbury%20(I'm%20second%20from%20the%20right)%3C/p%3E%3Cp%3EThe%20show%20is%20about%20four%20women%20who%20escape%20from%20their%20troubles%20in%20rainy%20London%20to%20a%20castle%20in%20Italy,%20where%20%E2%80%9Cin%20April%20it%20is%20simply%20a%20mass%20of%20flowers%E2%80%9D%20as%20%E2%80%9Cbushels%20and%20bushels%20of%20wisteria%E2%80%9D%20flank%20the%20terraces.%20%20Eventually%20they%20all%20find%20their%20happy%20endings,%20their%20hearts%20warmed%20by%20the%20Italian%20sunshine,%20the%20%E2%80%9Cunusually%20fresh%E2%80%9D%20sea%20air%20and%20facing%20their%20demons%20amongst%20the%20company%20of%20strangers%20who%20soon%20become%20friends%20(crazy%20how%20art%20parallels%20your%20life%20sometimes,%20no?)%3C/p%3E%3Cp%3ESo%20my%20contribution%20is%20simple%20but%20fitting:%20a%20traditional%20English%20shortbread%20cookie,%20laced%20with%20rosewater%20and%20dried%20lavender.%20%20I%20tried%20several%20variations%20%E2%80%93%20making%20a%20Scottish%20variety%20with%20my%20hands,%20then%20a%20batch%20in%20the%20food%20processor%20%E2%80%93%20until%20I%20landed%20on%20this%20one.%20%20Simple%20ingredients,%20a%20little%20time%20and%20patience,%20and%20a%20beautiful,%20garden-scented%20result.%3C/p%3E%3Cp%3ERosewater%20Lavender%20Shortbread%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EWith%20a%20hand%20mixer%20(or%20in%20a%20food%20processor)%20beat%20butter%20and%20sugar%20until%20smooth%20and%20fluffy,%20about%20two%20minutes.%3C/p%3E%3Cp%3EAdd%20eggs%20and%20blend%20to%20combine.%3C/p%3E%3Cp%3EAdd%20flour,%20cornstarch,%20lavender%20and%20rosewater%20and%20mix%20just%20until%20a%20dough%20ball%20forms.%3C/p%3E%3Cp%3ERemove%20from%20mixer,%20separate%20into%20two%20balls%20and%20flatten%20into%20disks.%20%20Wrap%20in%20plastic%20and%20put%20in%20refrigerator%20for%20at%20least%20one%20hour.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0%3C/p%3E%3Cp%3ELine%20baking%20sheets%20with%20parchment%20paper%20and%20flour%20work%20surface.%3C/p%3E%3Cp%3EIf%20the%20dough%20is%20still%20too%20soft,%20knead%20in%20a%20little%20more%20flour.%3C/p%3E%3Cp%3ERoll%20each%20disk%20into%201/4%20inch%20thickness.%20%20Cut%20into%20desired%20shapes%20(I%20made%20both%201%201/2%20inch%20and%202%20inch%20cookies%20with%20success,%20both%20with%20round%20and%20fluted%20cutters.)%3C/p%3E%3Cp%3EUse%20a%20spatula%20to%20transfer%20to%20lined%20sheets,%20wash%20lightly%20with%20egg%20white%20and%20sprinkle%20with%20sugar.%3C/p%3E%3Cp%3EBake%20for%2015-20%20minutes%20(depending%20on%20size),%20switching%20racks%20halfway%20through%20baking,%20until%20slightly%20golden%20at%20edges.%3C/p%3E%3Cp%3ENotes:%20I%20made%20two%20sizes%20(one%20to%20sell%20and%20smaller%20ones%20with%20the%20extra%20dough).%20%20Other%20than%20rolling%20the%20smaller%20size%20a%20bit%20thinner%20and%20baking%20for%20a%20shorter%20amount%20of%20time,%20they%20came%20out%20with%20equally%20beautiful%20results.%20%20The%20pictures%20above%20are%20of%20the%20larger%20ones%20that%20I%20brushed%20with%20egg%20white%20before%20sanding%20with%20sugar.%20%20The%20picture%20below%20shows%20the%20smaller%20cookies%20that%20weren%E2%80%99t%20brushed.%20%20To%20keep%20with%20the%20traditional%20sheen%20of%20a%20shortbread,%20I%20think%20from%20now%20on%20I%20will%20not%20egg%20wash%20the%20cookies%20before%20baking.%3C/p%3E%3Cp%3ESmaller%20version%20of%20Rosewater%20Lavender%20Shortbread%3C/p%3E){kind=link}
