Royal Pecan Cherry Ring

Ingredientes

  • 1 (6 ounce.) pkg. cherry gelatin
  • 1/2 c. sugar
  • 1/4 teaspoon salt
  • 1 (No. 2) can Bing Cherries
  • 1/4 c. lemon juice
  • 1/2 c. pecans, minced
  • 2 c. cottage cheese
  • 3 3/4 c. water (includes cherry juice)

Direcciones

  1. Drain cherries and cut in halves. Add in sufficient water to cherry juice to make 2 c.; boil the 2 c. of liquid. Dissolve sugar, salt and gelatin in warm liquid. Add in lemon juice and 1 3/4 c. water. Refrigeratein refrigerator till thick. Add in cherries and pecans.
  2. Pour in large mold-ring or possibly individual molds. Refrigeratetill hard. Unmold on lettuce. Fill center with cottage cheese. Garnish with mint leaf. Serves 8.
