,%20whilst%20making%20dinner%20and%20the%20outcome%20was%20a%20tub%20of%20chocolate%20coconut%20ice%20cream!%20I%20am%20not%20entirely%20sure%20what%20provoked%20me%20that%20evening%20other%20than%20this%20unrelenting%20heatwave%20that's%20slowly%20cooking%20me%20through%20but%20it%20was%20a%20good%20provocation!%3C/p%3E%3Cp%3EBack%20tracking%20a%20little,%20with%20regards%20to%20one%20of%20the%20recipe%20components%20a%20few%20months%20back%20I%20posted%20up%20an%20article%20for%20Good%20Housekeeping%20on%20creating%20an%20alternative%20dairy%20and%20gluten%20free%20pudding,%20in%20the%20form%20of%20my%20lush%20Sticky%20ginger%20and%20Almond%20rice%20pudding.%20As%20part%20of%20its%20development%20I%20had%20received%20a%20box%20full%20of%20free%20from%20items,%20and%20one%20of%20those%20items%20was%20a%20hot%20chocolate%20syrup%20called%20Choc%20Shot%E2%80%A6which%20became%20the%20chocolate%20part%20of%20this%20recipe%20as%20it%20was,%20well,%20er%20easier!%20*blushing%20with%20shame*%20It%20also%20has%20only%2014%20calories%20per%20teaspoon,%20100%25%20natural%20and%20low%20GI%20and%20diabetic%20friendly%20so%20you%20can%20really%20tell%20yourself%20its%20a%20healthy%20ice%20cream%20treat!%3C/p%3E%3Cp%3EAnyway,%20despite%20the%20heatwave%20it%20resulted%20in%20me%20playing%20around%20in%20the%20kitchen%20the%20other%20night%20and%20I%20decided%20to%20make%20a%20batch%20of%20coconut%20milk%20ice%20cream,%20using%20the%20syrup%20as%20a%20chocolate%20flavouring,%20along%20with%20some%20forgotten%20about%20meringue%20nests,%20after%20coming%20up%20with%20the%20idea%20of%20some%20kind%20of%20semi-freddo%20dessert%E2%80%A6%20I%20managed%20three%20lots%20of%20hand%20churning%20but%20eventually%20fell%20asleep%20despite%20the%20best%20intentions%20of%20some%20inconsiderate%20neighbour's%20doing%20their%20best%20to%20keep%20the%20block%20awake%20with%20their%20incessant%20shouting,%20shrill%20laughter%20and%20loud%20music,%20so%20the%20next%20day%20I%20had%20to%20let%20it%20thaw%20a%20little%20for%20some%20more%20half%20hourly%20beatings...%20I%20think%20it%20still%20needs%20a%20teeny%20bit%20of%20work%20texture%20wise%20as%20its%20frankly%20a%20bugger%20to%20scoop%20out%20but%20it%20worked%20so%20well%20with%20the%20baked%20peaches%20and%20so%20I%20have%20forgiven%20it!%3C/p%3E%3Cp%3ENext%20on%20to%20the%20baked%20peach%20part%20-%20Ohmigod%20where%20has%20u%20been%20all%20my%3C/p%3E%3Cp%3Elife!%20I%20took%20inspiration%20for%20this%20quick%20pudding%20from%20the%20recent%20Waitrose%20magazine,%3C/p%3E%3Cp%3Ethough%20I%20pretty%20much%20exchanged%20all%20the%20ingredients%20apart%20from%20the%20peaches%20as%20to%3C/p%3E%3Cp%3Ewhat%20we%20had%20in%20the%20cupboards!%20Fortunately%20it%20still%20was%20fabulous%20and%20even%20called%20for%20my%20wicked%3C/p%3E%3Cp%3Eauntie%20to%20comment%20that%20I%20really%20should%20be%20the%20size%20of%20a%20barrel%20after%20sharing%3C/p%3E%3Cp%3Epictures%20on%20my%20facebook%20page!%20It%20is%20fruit%20mostly...!%20The%20sweet%20soft%20peach%20flesh,%20combined%20with%20crunchy%20sweet%20biscuit%20and%20hint%20of%20spiced%20vanilla%20rum%20is%20a%20heady%20concoction%20and%20one%20i%20feel%20might%20just%20become%20a%20regular%20dish%20in%20my%20kitchen!%3C/p%3E%3Cp%3ECoconut%20and%20Chocolate%20Icecream%3C/p%3E%3Cp%3E1%20tin%20full%20fat%20coconut%20milk,%20good%20quality.%3C/p%3E%3Cp%3E8%20tsp%20chocolate%20syrup%3C/p%3E%3Cp%3E3%20meringue%20nests%20-%20not%20essential%20-%20mine%20dissolved%20mostly!%3C/p%3E%3Cp%3EPlace%20the%20coconut%20milk%20in%20a%20blender%20and%20blitz%20until%20smooth.%20Combine%20the%20syrup%20and%20crumble%20over%20the%20meringue%20nests,%20turn%20into%20a%20suitable%20container%20for%20freezing.%3C/p%3E%3Cp%3EEvery%2030%20minutes,%20take%20a%20whisk%20or%20fork%20to%20the%20mixture%20breaking%20up%20any%20ice%20crystals%20for%20about%204-5%20times.%20Ta%20da!%3C/p%3E%3Cp%3ERum%20baked%20Peaches%3C/p%3E%3Cp%3EThese%20are%20so%20quick%20and%20easy,%20and%20entirely%20worth%20making!%3C/p%3E%3Cp%3ECrush%20the%20biscuits%20in%20a%20small%20bowl%20or%20pestle%20&%20mortar.%3C/p%3E%3Cp%3EThen%20add%20the%20sugar%20and%20rub%20through%20the%20butter%20%E2%80%93%20best%3C/p%3E%3Cp%3Eto%20cut%20into%20little%20pieces,%20until%20you%20have%20a%20crumble%20mix%20of%20sorts.%3C/p%3E%3Cp%3ESpoon%20into%20the%20peaches%20and%20place%20on%20a%20lined%20baking%20tin.%20Drizzle%20over%20the%20rum%20and%20bake%20for%2015%20mins%20@%20180o%20and%20serve%20warm,%20with%20the%20ice%20cream.%3C/p%3E){kind=link}
